Ethiopian Chicken
Awesome! Although I'm confused as to how soy sauce made its way to Ethiopia, given the sauce was never widespread nor well-known outside the orient until the late 20th century - thus it would not have been a traditionally available condiment there. Anyhow, delicious. I made this with chicken legs. Next time I might try marinating chicken breasts overnight in this and then baking - to reduce the fat. The bonus on this dish is the homemade chicken stock! Thanks Heidi B!

Grilled Stuffed Swordfish
Wow! An impression maker is right! Swordfish is rather expensive but I certainly justified the purchase when I made this dish! The only change I made was to substitute Baby Spinach for Arugala and leave out the oil in the stuffing. I felt these changes had added health benefits and they certainly did not take away from this dish. Delicious! Thanks Judith.

Burmese Chicken Curry (Gaeng Gai Bama)
Very tasty! My husband is Burmese (born and raised in Rangoon/Yangon). He agreed with the description Michelle gave to the dish. It really is a Thai dish, not a Burmese one. However, since it has a Burmese influence, I thought I'd cook it up and see if it met with his approval. I substituted the coconut milk for reduced fat coconut milk. It worked perfectly and he loved the dish. He suggested that more fish sauce should be added (about 1 Tbsp. more) to give it a more authentic Burmese influence. Thanks!
