Retired military from the Cajun country who enjoys "rattlin' dem pots," as my grandma used to say. I like trying new things in the kitchen, which makes my family very happy.
My favorite things to cook
I enjoy grilling most of all. My specialties are smoked turkey, prime rib, babyback ribs, steaks and roasts for sandwiches. I also enjoy preparing different soups such as gumbo, Tuscan soup, torilla soup and African peanut soup.
My favorite family cooking traditions
Family gatherings were my favorite times. All us kids just ate and played while the grown-ups cooked and cleaned. Depending on the time of year, we'd have everything from venison to a pig roast with all the trimmings. Now that I'm the adult, I get more enjoyment out of the preparation and cooking than the eating.
My cooking triumphs
Learning to consistently make roux. I've finally found the patience to make dry and "wet" rouxes as dark as coffee without burning them. Secondly, I've learned to bake pies. I have many taste testers now who want good home-cooking, so I've tried different kinds of pies with much success. Lastly--Turkey! It's my most requested main dishes after much trial and error. see below...
My cooking tragedies
My first turkey was so dry nothing could be salvaged. I used too much garlic on my second turkey which made it inedible. I tried frying my third turkey and managed to burn down my garage--too much oil.
