Baked Potato Skins

Wow...these were fabulous. Quick and easy. I cooked the potatoes in the microwave. Used pre-cooked bacon. Left the onions off to suit my family's taste. Just like one's we get at our favorite restaurant!

Cinnamon-Roasted Almonds

I got rave reviews from family and friends. I bought a bag of whole natural almonds and after reading the previous review, was concerned they would be chewy. So I roasted them for 10 minutes at 350 degrees and cooled them before proceeding with this recipe. I also used vanilla. I tasted one prior to popping in the oven and b/c it didn't seem sweet enough, added some (maybe 1/2c) of brown sugar. These will also make a great school snack. thanks!

Irish Flag Cookies

Dough was very easy to work with. Cooked 10-12 min on an air-bake pan. The flags were adorable-took to a St Patty's party so I made mine a little smaller than the recommended 2x3. Delicious.

Irish Flag Frosting

This is the perfect glaze for the irish flag cookies. Don't expect a typical "frosting". Because the vanilla makes it cream colored, I made an additional 1/2 batch w/o vanilla for a middle white stripe. I liked that it hardens fairly quickly...if you apply one color stripe to all the cookies, by the time you move on to the next color-the first has dried. Just stir in a drop or two of water to your bowl if needed. I like the glaze on the thinner side-very smooth and pretty on the cookies.

Grandma Johnson's Scones

These are wonderful and with unlimited mix-in options. My favorite is w/ white choc chips and craisins. Once I forgot to add sugar and my co-workers still ate every last one! Crumbly at first, but keep kneading and it will stick together. Rather than cutting like a pie, I cut evenly across in 1 inch strips.

Romano Chicken

Wow, everytime I make something new for my picky family, they usually complain...not with this one! I didn't have a pounding tool, so I hammered the chicken w/ a rolling pin. I was very hesitant to use the microwave, but this turned out very moist,favorful and evenly cooked in 10 minutes. Used 2T butter, but I think 1T would be plenty as it pooled in the dish. Served w/ garlic and cheese mash potatoes.

Lemon Supreme Pie

I made a graham cracker crust and used a springform pan. I didn't notice the instruction to chill overnight, oops...my lemon sauce wasn't setting so I popped it in the freezer for a bit before serving. FABULOUS taste and presentation. Can't wait for an occasion to make this again!

Chinese Restaurant Almond Cookies

These cookies would probably been better made with lard, but I've never seen the real stuff in the store. I used a combo of butter and crisco and had to add an additional egg (maybe a little water next time?) because the dough was too dry and crumbly. I was surprised my children would not eat these. They are similar to the restuarant ones, but not quite as good.

Irish Cream Bundt Cake

I thought this was a wonderful cake considering I'm not a big fan of Irish Cream. I had made a batch of "Original Irish Cream" from this site for a gift and didn't know what to do w/ the leftover liquer. I followed the recipe as written except 1/2 c of nuts. I brushed on the glaze w/ a pastry brush which worked well as it thickened (I didn't think there was too much). The glaze hardened nicely and the cake had a subtle Irish cream flavor. The kids loved it and I had to package the leftovers up and give away so I wouldn't eat the whole thing!

Sherbet Shower Surprise

Wonderful punch. Not too sweet/refreshing. Made it w/ lime sherbet for St. Patrick's Day and garnished w/ an ice ring w/ lime slices. You can change the color to match the season or color theme of your party!

Mushroom Pork Chops

Although I am not a big fan of pork, this was actually quite good. I used season salt and pepper, browned the pork chops then sauteed 1/2 onion, 1 tsp garlic and the mushrooms. I added 1/4c red wine to the sauce (highly recommend this) and cook in the oven at 350 for an hour. Served over bow tie pasta. The sauce was wonderful(especially the mushrooms), the pork was well...still pork:)

Caramel Popcorn

Took this to work where it received rave reviews, everyone said it was the best and wanted the recipe. A bit sweet w/ 2 bags light microwave popcorn-next time I will use 6 quarts instead of 5. Also, next time will add nuts. It was very easy to make and after spraying my roasting pan, clean up was a breeze. Would make a nice hostess or thank-you gift in a decorative tin.

Cream Puff Cake

This dessert was fabulous! Next time I will soften the cream cheese longer to avoid the lumps. It makes alot of filling, so I reserved a cup or so and served it to my kids as pudding-they loved it! Also, I recommend using the chocolate topping from Eclairs II(that topping makes a yummy dip for strawberries too)...It makes a perfect cream puff/eclair dessert!!
