Mom's Shredded Elk Sandwiches

So yummy and so easy! We used venison instead, and used apple cider vinegar instead of lemon juice because we didn't have any on hand and no W. sauce, because we have an allergy in the house.

Megan's Granola

We always follow this recipe pretty closely. We usually sub out the oat bran for ground flax seed, I use whatever nuts I have on hand to equal 4 cups. Pistachios and Peanuts are a fun favorite in our granola. I also use 3/4 c. maple syrup instead of the combination of brown sugar and maple syrup. Love that it makes such a large batch!

Slow Cooker Beef Stew IV

Wow! We love, love, LOVE this beef stew! We made some modification based on what other reviewers had said, and the final product was amazing. We browned the flour and salt, plus 1/2tsp. paprika and garlic covered meat, then put it in the crockpot. In the same pan as the meat, I browned the onions until soft, then added 4 Tbsp. minced garlic, waited until it was fragrant, and then turned off the heat and added 3/4 of wine, making sure to scrape all the browned bits up. Then I put that mixture in the crockpot. I added the carrots, parsley, pepper, and onion soup like the recipe called for, and exchanged the water for beef broth, and added 1 tsp. Worcestershire sauce, 1/2 tsp. Paprika, 2 Bay leafs, 1 tsp. thyme and rosemary. I omitted the potatoes, and served it over egg noddles. This made for an amazing stew! Can't wait to make it again!

Slow Cooker Chicken Taco Soup

Love, love, LOVE this recipe! We always add our chicken breasts frozen, and they cook and shred just fine. We usually only add 2 chicken breasts, because we store them in the freezer 2 in a package. We usually add 3 cans of beans, either 2 kidney and 1 black bean, or 2 black bean and 1 kidney. We use chicken broth instead of beer. For us, this comes out more like a chilli. We put cheese on top of it and scoop it up with Tortilla Chips instead of a spoon. So yummy, so cheap and easy to make, and everyone LOVES it!

Maple Roast Turkey and Gravy

I've made this the last two Thanksgiving and it is DELICIOUS!! IT cooks up so beautifully and is sweet, but not overly. Can't wait to Thanksgiving day this year! I usually brine my turkey the night before.

Easy Garlic Broiled Chicken

Wow! This was amazing!! We used Olive oil in place of the butter because of milk allergies in our family. It was delicious even with the substitution. I took others recommendations and baked it for 40 minutes at 375* in the sauce and then placed it on a cookie sheet (without the sauce) and broiled it for 10 minutes each side. Then I dipped it in the sauce, put it on a platter and sprinkled a little more parsley on it. We used the sauce to mix into the rice I served with it. So delicious! I'm glad this is in our monthly rotation!

Curried Honey Mustard Chicken

This was DELICIOUS! We used 1/3 c. olive oil, because we have milk allergies in our family, so when I can, I avoid making 2 separate dishes! I also used Spicy Brown mustard instead of Dijon, simply because that was what I had on hand. We served it with some "Spicy Rice" - Rice cooked with chicken broth instead of water and a little curry. We had some carrots and green beans too. We put it in our monthly rotation we loved it so much!

Oven Roasted Potatoes

We just made these tonight and WOW were they delicious!! I followed the directions, with the exception of exchanging the marjoram for sage because that was what I had on hand and chili powder for crushed red pepper to have a milder heat for my kids. We will be making these again and again! Another plus, besides the taste, would be that these were so quick to throw together. I made them with Idaho potatoes, and left the skins on. Try them - they don't disappoint!

Chicken Lo Mein

This was way better than I expected it to be and very easy to make! I added more sesame oil than it called for, and sprinkled it with sesame seeds, but other than that, I followed the recipe to a T. IT was delicious!

Country White Bread

We love this bread. I always get 3 loaves out of it. Since my husband likes more of a whole wheat bread, we use 1c. rye, 1 1/2c. wheat flour and 4c all purpose flour. We use it as sandwich bread and love it!

Hamburger Vegetable Soup

Easy and delicious. I used 8 c. water and 4 tsp. chicken bullion, used carrots instead of celery and frozen peas and canned corn instead of mixed veggies(all I had on hand.) I also used those tiny bow tie noodles that you use in turkey noodle soup instead of elbows because that's all I had on hand. I added about 2 TBSP of chopped garlic too.

Banana Oatmeal Cookie

These were a hit! I followed the recipe mostly but made the following changes: 1.) I didn't have eggs, so I omitted it and added 1/2 tsp. Baking Powder instead. 2.) I used 1 tsp. Cinnamon and 1/2 tsp. allspice - no nutmeg. Mine baked for about 11 - 13 minutes. Yum!

Spicy Beef Vegetable Stew

Delicious, quick and simple! I threw this together the night before and turned it on mid morning. Some changes I made were: 1.) diced tomatoes with onions and garlic, not chilies 2.) chicken bouillon instead of beef 3.) omitted the celery 4.) 1/2 tsp. pepper 5.) 1 tsp. garlic powder to the meat 6.) added 2/3c. tiny bow tie noodles during the last 30 minutes of cooking. I made a few homemade biscuits to go with the meal and served them with honey and butter. Yum! Delicious meal!
