I LOVE this recipe! I did make a few modifications though. I used a 28 oz can of whole peeled tomatoes instead of 15 oz. and I omitted the 2 c. of water. I also added a 14 oz can of black beans (not drained) and the juice of 1 lime. I added 3 extra tbsp of cilantro as well.
And, instead of cooking and shredding the chicken beforehand, I just placed 3 boneless skinless chicken breasts in the pot. An hour before serving, I fished them out and shredded them and then placed them back into the pot. Delish! A family favorite!
