Braised Balsamic Chicken

I LOVE this recipe and make it at least once a month. Great flavor and is quick and easy to prepare. Makes a great week night dinner and pretty enough to serve to guests!

Southern Pulled Pork

This was SO good!!! I made it for a church gathering and everyone raved. I used Emril's Essence for the cajon seasoning which is what I had on hand and hickory flavored liquid smoke. Because I used more pork than what the recipe called for I increased the seasoning and liquid smoke. Very flavorful just the way it is. I served BBQ sauce on the side as an option but it definately didn't need it.

Homemade Pancake Mix

These are SO good. Make sure you read the directions all the way through before you make them because the dry ingredients make enough for about 4 batches. I added cinnamon and used 3 cups of wheat and 3 cups of white and they still tasted great. Much better than a store bought mix and almost just as easy.

Chocolate Cake II

This recipe was really easy to make, pretty much as easy as a box cake. I did make some alterations that had been suggested in previous reviews. I added 3/4 tsp salt. I also used 1/4 butter instead of the oil because the butter just sounded more appealing. I learned as I was adding the ingredients that I was low on white flour so in a pinch I had to substitute 3/4 cup of whole wheat flour. You can't even taste the difference. I made cupcakes with this. The cake has a great texture and consistancy when baked. It's just missing somthing in the flavor department, it needs more chocolate flavor. But it still is good and I would recommend trying this recipe yourself.

Dijon Pork Chops

This uses a similar technique to a chicken recipe that I have (the mustard and breadcrumbs) so I did what I do for that recipe. After putting on the dijon and breadcrumbs I seared until brown the chops in a skilled with olive oil (about 2 minutes on each side) and then put them in the oven. This prevents the sogginess that other posters have experienced. Definatly a great and easy pork recipe and will definatly use this again and again.

Country Chicken Supper

I'm giving this 4 stars because it has a whole lot of potential, just missing something that I can't quite put my finger on. It's one of those great recipies that you usually have everything in your cupboard to make. I replaced the water with chicken stock and added a few dashes of chili powder. It was good but nothing that I would serve to guests, but could be, if I could just figure out what seems to be missing.

Chocolate Chip Muffins

These were fabulous. My daughter and I made them when she needed to take a snack to school. They were quick, easy and really yummy. I didn't think they were dense at all as others have said. The only thing I added was a little vanilla. I think this would also be good baked in a bundt pan.

Michelle's Famous Washed Cranberry Sauce

I really liked the taste a lot! Next time I will use a little less water because I like my sauce thicker. I added some walnuts to give it a little crunch. I never realized making cranberry sauce was so easy!

Wild Rice And Chicken Soup

D's Famous Salsa

I liked how fast it was but using the ingredients listed I thought it tasted very canned. So I added, two whole tomatoes, another tsp of garlic, salt and pepper and two fresh jalapanos with the seeds. This made it a lot "fresher" tasting.
