Fast and Friendly Meatballs

WONDERFUL RECIPE! I used ground beef with 25% fat instead of turkey. You really need to have more than 7% percent of fat in your meat - trust me. After reading the reviews and wanting more flavor, I added a teaspoon of onion powder, 1-2 teaspoons basil, 1/4 cup of extra bread crumbs, 1/2 teaspoon salt, and 1/2 teaspoon pepper. They turned out great! If you need even more flavor, add a little bit of oregano, but I doubt you will be disappointed with this recipe! note: if you want them to be healthier, use less olive oil. 2 tablespoons was too much for me. 1 Tablespoon would be better. :)

Mom's Pumpkin Pie

This is a great recipe, and very simple! It's got lots of flavor, but you can also add 1/2 teas. or more of Pumpkin Pie Spice. I will definitely make this again!

Yummy Sweet Potato Casserole

This recipe beats all other sweet potato casserole recipes!! I am definitely making this for Thanksgiving. Here are some changes I thought helped: 1) Instead of boiling the potatoes, put them peeled and cubed in the oven on a well-greased baking sheet until they are tender. 2) use brown sugar instead of regular sugar. 3) double the vanilla 4) add 1/2 - 1 teas. of the following spices: nutmeg, cinnamon, and cloves. 6) if you want, toast the pecans before you add them to the topping. This is not absolutely necessary because they will be in the oven later, but if you would like more flavor from the pecans, toast them. 7) When you make this, be aware that the topping will not spread out when baked - the flour prevents it. So however you spread the topping, that's how it's going to look when it's done. I hope you like this recipe as much as I did! :)

Apple Pie by Grandma Ople

This is a great and beautiful pie that isn't too hard to make. My family loves it! I did make some changes that I thought helped a lot. 1. To the filling I added 2 teaspoons Cinnamon, 1 teaspoon Vanilla Extract, 1 teaspoon Allspice, 1/2 teaspoon Nutmeg, & 1/2 teaspoon Cloves. 2. I used the pie crust recipe called 'Buttery Flaky Pie Crust' and it turned out perfect! The downside is that it is hard to work with. 3. If you don't like to have soggy crusts, brush egg whites on them before you bake them. 4. This is the only bad thing I found in this recipe: After reading the other reviews about the filling being too runny, I added about a teaspoon of cornstarch. I regretted it a LOT. The mixture became very hard to work with and thick. Next time I will add a little bit more flour instead of cornstarch. This has become my favorite apple pie recipe, and with the changes I made, it's even better! I am making it for Thanksgiving tomorrow! :)

Perfect Pie Crust I

This is a really easy recipe that is slightly sweet and perfect for desserts! I found it to be the best crust I've ever made! I found that it needed more water than the recipe called for. It turned out that I needed about 1 1/4 cups of water instead of just one. You can also add half shortening and half butter. It affects the consistency. (Butter makes it flakier.) When you make this, make sure that the shortening is COLD and the water is ICE COLD. This REALLY helps!! I hope you enjoy this recipe! I know I will!

Chef John's Perfect Mashed Potatoes

This is an easy and tasty way to make mashed potatoes. I never knew all those tips and tricks he mentioned! I added basil, chives, and sour cream to mine and used 2% milk. These make perfect mashed potatoes - I'm going to make these again soon!

Egg Noodles

I probably did something wrong, but I really wasn't too happy with these. I decided I would substitute half a cup of white flour for wheat flour, and all I could taste was wheat. Also, they are VERY thick and hard to eat if you don't spend an hour cutting them in tiny, tiny, strips. There's got to be a better recipe somewhere!

Sweet Corn Bread

I'm amazed at this recipe! It is WONDERFUL! I was a little nervous about putting a whole cup of sour cream in there, but it turned out to be just the right amount! I made muffins instead of a loaf and it turned out to make 12 big muffins! To make the recipe a bit healthier, I added a flax seed mixture in place of an egg, and I put in half white flour and half wheat flour instead of all white. They are filling my house with heavenly smells right now! This has taken the place of my old cornbread recipe. I can't wait to make these again!

Candy Cane Cookies II

These are so adorable and they taste great! I just put in 1 teaspoon of almond extract, but next time I will put in all 1 1/2 teaspoons. I found the dough a little hard to work with at first, but after I sprinkled it with flour, it was okay. Mine needed 10 minutes in a 375 degree oven. I know I'll make these again and I am going to take these to my church cookie-swap tomorrow!

Soft Sugar Cookies IV

These turned out almost absolutely perfect! The ONLY down side was that there was TOO MUCH SALT. Next time half of a teaspoon will be enough. I mixed the sugar crystals with real sugar, and it allowed me to use less crystals and looked fine! Other than that, I just followed the recipe - no modifications. The biggest tip I can give is this: when you are creaming the butter, shortening, and sugar, MAKE SURE YOU GET IT VERY, VERY FLUFFY! It makes a big difference. This is my new favorite sugar cookie recipe! I love the effect that the shortening AND butter have on the cookies!

Mom's Favorite Baked Mac and Cheese

This is the best Mac&Cheese ever! It deserves MORE that five stars! My mom just can't stop eating it! (btw, if I don't take it away from her soon, she'll eat the whole pan!) ;) I used all sharp cheddar - we're not too big on American Cheese. I also added a bread crumb and parsley topping. It got crispy when baked, and added a nice contrast to the a soft macaroni! This is now one of our favorite dinners. I got so many complements on it! You've got to try this!! :D

Baked Salmon II

I used to not like salmon at all, but this recipe is divine! A few notes I had: 1) there was way to much olive oil! Decrease it to make it healthier and easier to work with. 2) add some dill weed to the marinade. This is staple (to me) for making salmon. 3) I only needed about 30 minutes of marinating, but the longer you marinade, the stronger the taste will be. I absolutely LOVE this recipe- it has become one of my most popular meals! I served mine with wild rice and asparagus - sooooo good!!!

Chocolate Pretzels

These are soooooo adorable!! I am giving them away as Christmas presents so I used holiday shaped pretzels, and red and green M&Ms, the letter side DOWN. This is a really good kid project, and the sweet and salty taste is really nice! Mmmmmm.....

Snickerdoodles I

This is the perfect snickerdoodle recipe! I reduced the salt to 1/4 teaspoon - you can even omit All the salt if you want. BIG TIP: WHEN YOU TAKE THEM OUT OF THE OVEN, THEY WILL SEEM UNDERDONE, BUT THEY'RE NOT. WHEN THEY COOL, THEY BECOME MUCH, MUCH HARDER! On the first batch, I put them in for 12 minutes, and when they were cooled, they were too crisp. Next time I only did 9 minutes, and they were nice and soft - perfect. Thanks so much, Linda!

Easy Potato Sausage Soup

This was pretty good, and probably would have been better if I had followed the recipe exactly. I didn't have potato flakes, so I made a paste out of butter, flour, and milk. Next time I'll just add flour. I substituted the water for milk. You could also use chicken broth. Also, I didn't have carrots or celery. I found the soup to be very buttery, and didn't care for it much. My family actually liked it much more than I did!

Traditional Mexican Guacamole

I made this for our Mexican food night - mmm... so good! I made some changes because this is how I always make mine: add chopped tomatos, 1-2 T. soy sauce, extra onion, 1 tsp. salt, 1 tsp. chili powder, and 1/2 tsp. black pepper. It's so addictive!

Melissa's Turkey Meatloaf

Delicious! I found it perfect, and my family couldn't keep out of it! Instead of using condensed tomato soup for the topping, I used a mixture of ketchup and brown sugar. This is my favorite meatloaf recipe!
