Persimmon Cookies I

Envision a warm home, twinkling Christmas lights, a cup of hot something or other, a log burning in the fireplace, the giggle of a happy toddler under the Christmas tree, and the warmth of a full heart... What does that taste like? These. Seriously. Make them and taste Christmas happiness in your mouth. Just made them for the first time and they are a pure joy to eat.

Roasted Beets 'n' Sweets

I found this recipe tasty but the black pepper was TOO MUCH. I even tried rinsing some of the pepper off after cooking and couldn't. I tried pawning it off on other people and although the recipe ingredients are all delicious, the pepper was too much for every tongue that tried it. If you have lots of tastebuds like me and are sensitive to pepper, cut the pepper down to 1/4 of a teaspoon or none at all. Tried it without pepper and it was much better. Beets were sweet and earthy and, as usual, the sweet potatoes were like dessert. Enjoy!

Baked Kale Chips

This is the best kale chip recipe of the three we have tried. I found it helpful to space the leaves so none overlapped on the baking tray - this made the cooking more even but did result in the total time being longer than advertised. If I pulled a tray out and some were not crispy yet, I put the tray back for a minute or two (and lather rinse repeat) until all were crispy. We didn't have any trouble with burnt edges like some other reviewers, but I was checking on them frequently in the final minutes, and also we use an electric oven which may not run as hot as gas. We found the final result to be crisp, melt-in-your-mouth, and delicious (as far as kale chips go). There was still some of that signature bitter kale flavor, but this definitely made the kale more palatable. If you want kale that doesn't taste anything like kale, try using it in a pasta recipe or something where it isn't the main ingredient. Enjoy!
