Hasselback Potatoes

Very nice just as presented. Our favorite twist is to cut the potatoes, then wrap them in a deli-size sheet of foil and bake for about half an hour. Melt the butter, press in a clove or two of garlic, fresh ground pepper, and about an eighth of a teaspoon of crushed rosemary per potato. Fold back the deges of the foil to expose the top half of the potato, pour melted butter mix on top(the foil 'boat' keeps in all the goodies!) Add a good sprinkle of sea salt. Bake until edges are crispy, about another 15-20 mins. Add cheese and throw back in the oven for a few minutes. Bacon/cheddar, spicy variations are great, too. Try different things- we haven't found a clinker yet!

Paska Bread

This is a great recipe- my daughter makes this every year for Christmas and Easter, by extended family's DEMAND, not request. Love you, Gwen!! This makes three very large loaves. Is especially attractive when the dough is braided, like challah. Try this just as written- it's YUMMY

Southern-Style Oven-Fried Catfish

OK: this is a keeper. The fish was very crunchy, but absorbed very little of the oil. Recipe made enough coating for about three pounds of fish. Nice kick, but definitely not too spicy hot. We will try coating with other types of fish, maybe chicken fingers too.

Bourbon Whiskey BBQ Sauce

Oh, yeah! Make sure to make this at least a day ahead to let flavors mingle. Had better luck with Hunt's ketchup than Heinz, it tastes less processed. Also threw in a tablespoon of fresh lemon juice to jazz things up a bit. One of our local BBQ 'legends' adds butter to his sauce: try stirring in a few tablespoons to this recipe as it is cooling, makes it even better. Printing off copies ahead of time for graduation party tomorrow: people LOVE this stuff.

Apple Yogurt Pancakes

Ehh, OK. Heavy, odd texture, and not a whole lot of flavor. I'll add some brown sugar as other reviewers have suggested and try it again, but don't have high hopes.

I made a lot of this for a crowd. It disappeared quickly. Keeps and freezes well, too. Try chicken broth instead of water.

Three Bean and Artichoke Salad

This is different and tasty. Maybe the kind of mustard I used was unusually sour, but I needed to add a teaspoon or so of sugar to rescue the dressing. Tried it with a few good sprinkles of tarragon, and that made it even better.

Hearty Meatball Sandwich

This is a well-loved 'team meal' dish- skimp on the sauce so the bread doesn't get soggy,wrap it up in heavy foil and it travels well. Kids can 'customize' their sandwich with hot pepper flakes, banana pepper rings, extra sauce, extra cheese to their individual tastes. Serve with salad and fruit, cookies if the coach permits, and you will have a happy group. This is what I 'have' to make when it's my turn to feed the team.

Eggplant Parmesan II

OK, this is really, really tasty. Eggplant-hating husband even took seconds. Had a large eggplant, so one was plenty. Sweated it first, otherwise followed recipe. A keeper.

Spicy Bean Salsa

This is great---make it for a picnic, it vanishes. I add half a cup or so of chopped red pepper, a small can of sliced black olives, and a little cilantro if I have it handy. YUM
