Vegetarian Kale Soup

Yum! I was a bit concerned about the ingredients pairing together well, but I really enjoyed this soup! It's really easy to make and very filling. I did make a few modifications based on preference and ingredient availability: I used 2 large potatoes and that was more than enough for me (the soup was packed with potatoes) and I used 8 c veggie broth instead of water and veggie bouillon. I think I'll also add another can of beans next time. I also wish the amount of kale required would have been more specific. My grocery store only had the bagged kale so I had to guess on the amount. I ended up using probably 5-6 cups of kale and I'll likely add more next time. Anyways, great recipe that I will make again and even my meat-loving, soup-hating husband seemed to enjoy :)

Roast Sticky Chicken-Rotisserie Style

This recipe is fantastic! I followed the recipe exactly except I included a couple cloves of garlic, chopped, in the cavity and excluded white pepper. I'll start making this weekly. Plus, it makes some great leftovers!

Garlic Chicken with Orzo Noodles

Easy, quick, and yummy. I made the orzo in chicken broth and used 2 chicken breasts, but followed the rest of the recipe exactly. For a healthy, easy recipe, I give it 5 stars.

Slow Cooker, Easy Baked Potato Soup

I don't know what went wrong here, but this tasted SO strange to me. I followed the directions exactly aside from adding about 1/2 less red onion than stated in the recipe (my onion was a little big, but the total amount I used would have been less than 1 small red onion). Still, the finished product tasted way too oniony (I like onions, so it's not just my preference). I like the concept of this dish, but I think it would improve tremendously if white onion (or maybe even scallions) were used instead of red. I also think the ranch seasoning made it taste a little odd. If I make this recipe again, I'll cut back on the ranch seasoning and substitute the red onion with scallions or a small amount of chopped white onion.

Eggplant Bake

Really yummy! It smells so amazing while cooking. I wasn't a huge fan of the onions, though. They didn't seem cooked enough for me. I'll use less and slice even thinner next time. I agree that frying used a lot of oil, so next time I'll give the baking method a shot. I'm also tempted to add something green in there. Maybe a spinach layer. Either way, it was a good recipe that I'll use again :)

I didn't like this recipe at all, which is surprising because I'll eat almost anything. The biscuits tasty doughy, and the overall recipe was too rich.

Slow Cooker Chili II

This recipe is really good and very easy. I made this in a tiny 1.5 qt. slow cooker with the following modifications: no celery, ~3/4 lb. ground beef, 1 can tomato puree, 1 can kidney beans (drained), ~3/4 can cannellini beans (drained), cayenne pepper, red pepper, no parsley, no hot sauce. I'm always a bit heavy-handed on the spices, so I probably used more of those. I threw the onion and green bell pepper on a saute pan for a few minutes, and then added the meat, followed by the garlic. Lots of salt and pepper. Cooked until meat was brown, and then threw everything in the slow cooker. Also, I only let it cook on low for ~6 hours. The result was flavorful, pleasantly spicy, and reallllllly thick. It's a bit more tomato-y than I normally make my chili, but it wasn't a bad thing. This recipe is a keeper.
