Cranberry Pistachio Biscotti

I made two batches of these, one as written, one without any almond extract, since no one in my family is crazy about almond extract. I also swapped the nuts and cranberries for chocolate chips, at my sister's request. This recipe is awesome! The biscotti came out exactly the way I hoped. I followed Suzanne's suggestion and covered the loaves with a dishtowel while hey cooled, and they did not crack on top at all. For the second batch, I formed one big rectangle on the cookie sheet, so that I could cut long cookies instead of small ones. The long ones look really pretty. I used a knife to cut them, then switched to a pizza cutter halfway through. The pizza cutter made for much prettier cookies. I'll definitely use a pizza cutter next time. I can't wait to make these again!

Amazing Sun-Dried Tomato Cream Sauce

Delicious! I used lowfat evaporated milk instead of cream, and otherwise followed the recipe exactly. I think I'll use even more sundried tomatoes next time. They add so much delicious flavor!

Tacos in Pasta Shells

These were awesome! I used a can of enchilada sauce, and poured just enough in the bottom of the baking dish to cover, and the rest over the stuffed shells. I didn't have any tortilla chips, but I don't think this dish was missing anything. I'll definitely be making these again!

Roasted Garlic Zucchini and Tomatoes

Delicious! There wasn't much left over, but I put what was left in the food processor the next day, and added it to some spaghetti sauce. The left over veggies chopped in the food processor would also make an amazing spread for crackers or pita.

Slow Cook Thai Chicken

Yum, Yum, Yum! I actually started too late in the day to do this in the slow cooker, so I made the sauce on the stove, using all the ingredients in this recipe. It worked great! I baked the chicken breasts and steamed the peppers and onions, then tossed it all in the peanut sauce just before serving. It was delicious over rice, sprinkled with some fresh cilantro. There is plenty of sauce left over, so I'm sure we'll be enjoying this in a few days, too.

Chicken With Mushrooms

This is a great recipe. I used 1/2 can of chicken stock and 1/2 can of lowfat cream of mushroom soup. I also put a few cloves of garlic in the bottom of the baking dish for more flavor. I served it with couscous on the side. The leftovers were amazing for lunch today.

Arrabbiata Sauce

I probably did something wrong, because this didn't turn out at all like I expected. It was really sweet, and even after cooking it for a while I could taste the wine. I think next time I'll use chicken stock instead of the wine, and less sugar.

Spiced Sweet Roasted Red Pepper Hummus

This is soooo good! I didn't have tahini, so I used peanut butter, and I forgot to get cayenne pepper, so I used chili powder. It came out great! I can already tell that my roommates will request this one a lot.

Champagne Chicken

I made this last night, and it was delicious. I didn't have any flour, so I omitted it, and didn't miss it. I put salt and pepper on the breasts about 2 hours before I was ready to cook them, and put them back in the fridge. I also added a clove of garlic to the oil before cooking the chicken. I cut the chicken into smaller pieces before I cooked (I only had a small pan), used about 3 cups of mushrooms, and only about 1/2 cup of cream. I thickened the sauce just before I served it with a little bit of cornstarch. Long story short, my boyfriend loved it, and I will definitely make it again.
