Spanish Rice II
I will never again make the boxed variety of this dish. This recipe was great! I did read the reviews before making it and made 2 changes as other reviewers had mentioned. I used chicken broth instead of the water and only 1.5 cups of it. I reduced the chili powder to 1 tsp and added 1 tsp ground cumin and also added some minced garlic. Next time, I will bump up the chili powder though. It will be a make again and again dish here.

Jamie's Minestrone
This was a great soup! Made enough for two dinners for 4 people and then froze the rest. I made this the crockpot and let it cook for about 5 hours and the vegetables were tender-crisp, not over cooked like some soups can be. I used some of the reviewers suggestions and used all chicken stock and reduced the water to 1/2 cup. I also used 1 can of tomato sauce and 1 can of fire-roasted, diced tomatoes. Definitely add the wine! I sauteed the onion, carrot and celery a few minutes just to get the flavors to blend and added everything to the crockpot. Omitted the spinach and added a can of white beans. The spices were perfect. This is a keeper!!
