Tonight I made Coconut Shrimp 1 by LINDAV10. What a great recipe! I've eaten it so many times at restaurants but never made it myself.
The shrimp was tasty and crispy - reaffirming my decision to buy a deep fryer last year - and I used one of the sauce recipes that I found in the comments posted on the recipe.
The directions in the recipe say to let some batter drip off and I was too impatient to do that. It was dripping too slowly. So the breading on my shrimp was a little on the thick side, but still tasted great. Next time I'll probably let more drain
