This is now one of our favorites! I followed some of the suggestions in previous reviews to make this simpler and a bit healthier.
*I toss boneless chicken breasts in and shred at the end right before serving.
*Add a can of low sodium black beans (rinsed).
*Substitute a can of low sodium diced tomatoes for whole peeled.
*Use 1 tsp. of dried cilantro instead of 1 T.
*Eliminate the 1 tsp. salt altogether.
*Add 1 reduced sodium chicken bouillon cube or 1 tsp granules to the 2 cups water.
*Serve with Baked Tostitos and a little shredded sharp cheddar.
