Bacon Cheese Frittata

I had never made a frittata before - we all really enjoyed this. I had a lot of eggs on hand so I used 8 and I had pancetta instead of bacon. Great Sunday night dinner with some homemade scones or biscuits. Will definitely make again.

Soft Oatmeal Cookies

Great recipe! The whole family loved them. I used dried cherries instead of raisins. Also, I did not chill the dough or flatten the cookies and they turned out perfect. This will be a regular cookie at our house.

Cinnamon Rolls III

Delicious! I've been looking for a cinnamon roll recipe and I've found it. I made the dough exactly per the recipe but I did make extra filling and used my own icing recipe. The rolls turned out perfect. Other doughs I've tried have seemed dry or too heavy - this was perfect! We didn't need 16 rolls so I split it into 2 pans of 8 and froze the other pan.

Downeast Maine Pumpkin Bread

This was really good...I used applesauce to replace half the oil and brown sugar for one of the cups of white sugar. Family loved it and it was a nice way to say hello to fall. Very moist and not too dense. Will make this a lot.

This is a keeper for us. Made it exactly according to the recipe. We thought it needed a little salt but otherwise a great side dish. Plus a good base recipe for using leftovers.

Light Oat Bread

Made this in my bread machine and it was very good. Good texture and not overly crumbly. I followed the recipe exactly. Could use something but I'm not sure what - maybe more salt? I am planning to make it again and will try adding cinnamon sometime to make a breakfast loaf.

Slow Cooker Texas Pulled Pork

This was really good - incredibly tender, good flavor. I made as directed except for the chili powder. I used half as much because I was afraid it would be too spicy for us - next time I will definitely use it all. Definitely a keeper - going to use the leftovers in taquitos tomorrow!

Honey Of An Oatmeal Bread

This was delicious! Some the scratch recipes I've tried haven't risen very well or had the best texture but this was just about perfect. Light, tasty.....I used butter instead of oil and added 1 TBL of dry milk powder. And I didn't measure the honey exactly and used the light crust setting on my machine. Will definiltey make again - maybe tomorrow!

Bread Pudding II

This was delicious! I had leftover homemade bread from Christmas Eve. I used that and substitued heavy cream for half the milk just because I had some to use up. I used dried cherries also and soaked the bread in the custard for 20 minutes before baking. It came out perfect and I topped it with some fresh whipped cream. Even the kids thought it was good - will definitely make this again!

Banana Muffins II

These were moist and delicious with lots of banana flavor. Definitely a keeper! We always have bananas in the house so these will be a regular recipe at our house. I added 1 tsp vanilla and subbed applesauce for the butter - everything else was per the recipe. I don't think any spices are necessary - these muffins have plenty of flavor.

Honey Lime Mesquite Chicken

Loved this and it couldn't be easier! I had Weber brand mesquite marinade but otherwise followed the recipe. Let it marinate about 30-40 minutes and grilled it. Even the kids couldn't get enough!

Lemon Bread

We loved this bread! I added one extra TBL of lemon juice to the batter but made no other changes and the whole family liked it. Will definitely make again. The glaze had plenty of lemon flavor for us.

Blueberry Cream Muffins

I halved this recipe but otherwise followed it exactly. Muffins were moist and rose nicely. My family thought the sweetness was fine and liked the muffins. Might try them with a streusel topping some morning when I have time. Also might try Greek yogurt for the sour cream. Definitely a keeper - I will make these again.

Lime Chicken Picante

Good Old Fashioned Pancakes

The whole family liked these a lot. We like pancakes for dinner and these went together quicly and were fluffy and a little thicker than the old recipe we were using. I did add the vanilla as suggested by some reviewers. Really good!

Chocolate Banana Cake

We all loved this cake, particularly on the second day. It was very moist and a good blend of banana and chocolate - one didn't outdo the other. I used the bananas, oil and eggs as stated and then added water to make the amount liquid equal what the box called for. Good cake!

Aunt Teen's Creamy Chocolate Fudge

I've made this several times and I've thrown away my grandmother's recipe! This fudge is sooo good - thick, creamy, and easy to make. I use all milk chocolate chips. Fabulous fudge!
