BBQ Pork for Sandwiches

I made this exactly according to the recipe. It turned out really well and it was really easy to make in the crock pot. I think next time I will choose a cheaper cut of meat because it didn't make as much as I expected and was somewhat expensive with the boneless pork ribs. I might also add more barbecue sauce after it is done cooking.

Strawberry Swirl Cheesecake Bars

Very good after a day of chilling. Not good right after it's baked. Tastes great with a little bit of spray whipped cream. Quite rich and filling but not too sweet. Great with coffee.

Hearty Split Pea Soup

This didn't turn out that well for me but I think I cooked it too long in the slow cooker. I added two stalks of celery and used 4 cups of chicken broth and 1 cup of water, and left everything else the same. I cooked it for 10+ hours in the slow cooker and it ended up all brown and gross looking. My husband says it tastes good, but I think it only tastes ok. It's really mushy but probably an operator error. It looked slightly better after I added the milk. I might try it again following the directions better next time.

Slow Cooker Beef Stew I

This turned out really well. Good healthy, hearty meal. Husband and I really liked it. Just your basic beef stew. Will try with organic beef broth if I can find it next time since I'm trying to cook to avoid the MSG and other hidden "goodies."

Peanut Butter Bars I

The bottom (peanut butter mix) part of this was really good and did taste a lot like a Reese's peanut butter cup, but the semi-sweet chocolate wasn't doing it for me (although I did forget to mix in the 4 T peanut butter with it). I will definitely use milk chocolate chips if I make this again. The texture of the peanut butter cup part is really good.

Baked Slow Cooker Chicken

This was really good chicken. I especially loved the dark meat. It really did fall off the bone. I didn't use the aluminum foil balls and did use chicken broth made with a bouillon cube and boiling water on the bottom (2 cups). I stuffed the whole chicken with green onions and garlic, and put chopped celery, carrots, and a yellow bell pepper under the chicken. The bell pepper got soggy with all of the cooking, but the rest turned out well. I did try to season it well and tried to get under the skin as much as I could with the spices. Smelled great all day too. I cooked it on high for 2 hours and on low for 4 hours.

Caramel Shortbread Squares

This tastes pretty good but it doesn't stick together. The bottom layer crumbles off when you take out a piece. I ended up stirring vigorously for 10+ minutes to keep the caramel from burning, and when I poured it on the first layer, it didn't spread easily. Pushing the first layer in the glass 9x9 pan was also quite messy. Maybe putting the shortbread layer in the freezer while I was making the caramel wasn't a good idea because it made the caramel not sink in and stick to the bottom layer. All in all a little disappointing. It will taste good but I wouldn't want to take it anywhere.

Three Berry Pie

Good. I used too few berries for fear of run-over and overdid the cornstarch since most of my berry pies end up runny so it had kind of a weird textured bottom but otherwise it was good.

Chocolate Cheese Frosting

Not great. Very runny, even when kept in the fridge. Thankfully, I didn't frost the cupcakes and just frosted each one before eating it. Usually, 24 cupcakes wouldn't last a week in my house. I've had mine around for at least a month in the fridge and they are not going fast. The "tang" people talk about is not a good thing. I'm not sure if it's the cinnamon or what, but the frosting does not taste good and it leaves a bad aftertaste. I made it exactly according to the directions.

Linda's Lasagna

Very good lasagna. Takes a long time to make. I didn't let the sauce simmer for an hour as that was just way too long to wait for me. My husband really likes it and it wasn't very hard, just time-consuming.

Southern Peach Cobbler

I ended up with a really liquidy bottom half even though the dough cooked well and everything. And I didn't think the canned peaches tasted that great. They never get tender and soft like fresh ripe peaches. It was easy and perhaps I didn't cook it long enough, but overall I'd be hesitant to make it again or I might not use all the juice from the can next time.

Home-Style Minestrone

I thought this was very good, esp with the Parmesan. I wouldn't make it again right away b/c it took awhile to eat it all, but I will be making it again. Healthy and hearty and not too hard. Didn't really love the zucchini in it though.

Nutty Apple Crisp

Very good. I used a mix of chopped walnuts and pecans, and it was the best apple crisp I've ever had. The nuts make a huge difference in taste! I was getting rid of really old apples I had picked at the orchard that were not looking so good anymore, and it still tasted great!

White Chocolate Coconut Macadamia Cookies

Very good. I didn't mix everything in the right order b/c I didn't read ahead and it still turned out really well. I was trying to duplicate some cookies from our work cafeteria. I used Lindt white chocolate bars chopped up and they made it taste amazing. Bigger pieces of macadamia nuts work well. A little hard to form balls from the dough but very worth making.

Caramel Apple Pork Chops

Would bake next time instead of frying - meat turned out tough. Apple topping was excellent. Kind of random on top of pork chops, but served with rice pilaf, made a great meal. Easy and quick to prepare. Find directions on baking - shake & bake?
