Janet's Rich Banana Bread

I make this all the time. I usually substitute half whole wheat pastry flour and half white whole wheat flour and it turns out great. I also add pecans. Very good, moist recipe. I don't melt the butter (I soften it) and I definitely mash the bananas up to make them sweeter rather than use cut banana chunks. Great recipe b/c of the sour cream!

Maple Walnut Pumpkin Pie

The filling batter tasted better than the pie when it was cooked, but it was still pretty good. I would probably play around with the recipe if I were to make it again. I made a graham cracker crust that had only butter and graham crackers for ingredients and would choose one that included sugar next time as I didn't find the pie to be quite sweet enough. It was good but could be improved upon with homemade whipped cream.

Graham Cracker Crust II

I'm not sure why this gets such rave reviews. The directions are completely confusing (what is a "square" of a graham cracker? To me there are 4 little rectangles per one large rectangle, with half being the only square.) I started off with 1/4 cup butter and 4 large crackers, increased it to 8 crackers when it was obvious that 4 wasn't nearly enough for a 9" pie crust, and eventually settled on 6 TBSP of butter to 12 large crackers. It worked, and it stuck together after baking it better than I would have guessed, but it didn't taste that great. I would not make this crust again. I would go for a recipe that calls for sugar. I made this with the Maple Walnut Pumpkin Pie and it wasn't very good (but the pie itself was pretty good.)

I made this with coconut milk (boxed, not canned) and wouldn't do that again. Will try again as written next time. Quite good still but not as creamy the way I made it.

Bean and Honey Burrito Casserole

I used healthier tortillas (flax, etc.) but it was still quite good. I like all the beans in the recipe. Healthy and tasty. Great mustard/honey sauce! Will make again!

Spicy Sausage and Rice Casserole

Very good flavor. Good with modifications written by first reviewer. Will definitely cook on stove-top next time, halve the amount of sausage to reduce the fat, not add extra salt, and try to fit in extra veggies. I will probably use sweet sausage instead of spicy but it wasn't too bad spice wise. My husband loved it. I might add twice as much rice and broth next time b/c it was very meaty.

Chef John's Banana Bread

It was definitely interesting and different with the chocolate chips but not necessarily better than a regular banana bread recipe. I didn't think it was quite moist enough. I think I will try adding chocolate chips to a recipe that calls for buttermilk or sour cream rather than make this recipe as-is again. I think my regular recipe that calls for banana extract is better.

Way too long in oven. Cook in microwave first and then finish in oven? Or use aluminum foil to finish cooking when it's hot.

Pasta Bake

Very good with ground beef. Dave loved it. Seems like the sauce gets watery in the oven and you need to add more. Try adding Parmesan cheese as well as Mozzarella.

Spaghetti Carbonara II

Pretty good but not good enough to justify the calories for me. Tried it with whole wheat spaghetti and tried baking the bacon, which didn't turn out so well. Used the non-nitrate stuff and it wasn't that good.

Chocolate Walnut Bars

These were way too good. We ate them way too fast. When warm, the top tastes like lava cake filling. The crust is awesome. Both my husband and I loved these, and they were fast and easy to make and I already had all the ingredients on hand. I only dare make this again if I need to bring a dessert to something as it was just too tempting to have around.

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

So good! DH and I are fighting over the leftovers. Took a little longer to make than I would like but I will definitely make this again. I'm sure it would be a great meal for kids. I think I'll use frozen peas and carrots next time to save some time chopping carrots. Loved the Pillsbury Grand biscuits on top. Wasn't sure about the egg yolk painted on, but it was great. 20 minutes was all it needed in the oven for us.

Dark Chocolate Sauce

Very good. Loved that it had only ingredients that I had on hand. I forgot to add the vanilla at the end and it was still great. We ate it warm over fresh strawberries! I wish I had halved the recipe or bought more than one container of strawberries. Very fast and easy to make. Will definitely make it again when I need a chocolate fix. Much healthier than the store-bought chocolate dipping sauces for strawberries. I used my espresso maker to make the strong brewed coffee and it didn't taste like coffee at all.
