Ratatouille

I've never cooked with eggplant before, and the one I used ended up being pretty bitter. I'd try it again and hope I get a better eggplant. I added fresh thyme and rosemary, and that was delicious.

Peanut Noodles

I think I'd need to add a little less soy sauce, it was pretty salty otherwise. I would fry up some chicken with this.

Easy Quiche

I really enjoyed this. As per other suggestions, added only 1.5 cups milk (skim); and sauteed onion and garlic. Also, it only needed about 30-35 minutes to cook, but my oven cooks a bit hot.

Italian Meatballs

Didn't have even close to the amount of oregano and still turned out great. did 1/3 of the recipe and added a splash of milk for moisture. Definitely only needed about 20-25 min cooking time in the oven.

Lime Chicken Soft Tacos

I really like this recipe, but I find you need to add the juice of a whole lime. I like the oregano flavour. Also, this time I didn't have red wine vinegar, so I subbed rice wine vinegar (just added a bit more) and I think I liked it better!

didn't add the spice, because I don't like spice. Used Apple Cider Vinegar because I didn't have rice vinegar. Also added broccoli and snap peas. Very good.

Potato Leek Soup III

Added 2 cloves of garlic, not sure if that really did anything. At any rate, this was delicious and easy. Also, last minute I added some ham, and I think that really helped round out the flavour. Oh also only added 1/2 cup butter, and used 1 cup whipping cream and 1 cup half and half.

As is, it's rather bland and was very liquidy, and as it cooked, the liquid bubbled around the edges, which I think caused the edge to cook much faster than the rest. It also seemed oily...

Delicious, roasted squash first, and skipped out on cayenne pepper. I agree with the reviewers who say that apple slices really finish it off!

Pretty decent. Not my favorite ever. I had high expectations based on the reviews. I did use zucchini that I had previously frozen, so I don't know if that made a difference.
