Colleen's Potato Crescent Rolls

Reviewed: Jan. 8, 2008
Awesome. I followed the recipe exactly and they turned out perfect. I don't normally have much luck with yeast, but figured I'd give these a try and I'm glad I did. I didn't leave them in the fridge for quite 8 hours, but I left the second rise a bit longer than an hour. Soft, yummy, thanks for a great recipe! UPDATE: Made these again for our Thanksgiving Feast. They are no fail! My dad and my boyfriend thought I bought them from the store (which is a compliment, from them!). I did cut the recipe in half, and had to work in about 1/2 cup more flour while kneading. I brushed with melted butter on top as well, before putting in the oven. These are so awesome!

Firecracker Fried Chicken Drumsticks

Reviewed: Dec. 16, 2009
I don't care for spicy, but DBF gave this 5 stars. He said the breading was perfect, although the whole shebang could have been spicier for his taste. I cooked in a deep fryer, and once they were out I tossed them in a mix of half hot sauce/half margarine, with a dash of garlic powder. Relatively quick and easy; I marinated for about 4 hours, next time I will do it overnight. Thanks for a great recipe, my man cleaned his plate!

Meatloaf with Fried Onions and Ranch Seasoning

Reviewed: Jan. 26, 2010
I like any kind of meatloaf, but this one was extra tasty! The only change I made was on the stuffing mix; I don't keep stuffing mix on hand, I just used bread crumbs and my own herb seasoning. Scaled the recipe to 4 servings because I only had 1 lb ground beef, turned out very good, thanks for this recipe!

Boyfriend said it was good, he doesn't say that about much, especially soup. Delicious!

Ham and Swiss Braid

Reviewed: May 19, 2009
This is so yummy! I made one change; the store was out of ham so I tried this with roast beef and sliced swiss. Excellent! The pickles add a nice bite. I love the dijon in the dough also. I had to re-read the braiding instructions a few times since I have never made anything like this before, but once the light dawned it was so easy :) I can't wait to try this with ham, thanks for a wonderful recipe that impressed my picky boyfriend! UPDATE: Made this with ham for DBF's family; they loved it! They have a convection oven, I set it for 370 and cooked about 25 minutes. Excellent! UPDATE: Made this for friends and added poppy seeds on top...scrumptious. Only took 25 minutes in my oven.

No-Fuss Cinnamon Cheesecake

Reviewed: Jun. 30, 2009
This is so amazing! I love to complain about how picky my boyfriend is, but really, he never likes the crust on any of my desserts. The first thing he said about this one? "I like the crust!" I about had a heart attack :) I love how it's rich but not too rich, and cinnamon is a nice different touch. Definitely a keeper, thanks!

Pesto Mushroom Chicken

Reviewed: Aug. 10, 2009
Great stuff! The only change I made was to sub pine nuts for the walnuts. Oh and one tablespoon of the oil in the pesto was walnut oil. :) No leftovers!

Eggplant Parmesan II

Reviewed: Jul. 13, 2011
Five stars if my boyfriend is satisfied (and goes back for seconds) with a vegetarian meal! I did cook the eggplant a bit longer for more browning/crisping action.

Slow Cooker Clam Chowder

Reviewed: Nov. 23, 2009
This is great! I've never made Clam Chowder before, but after reading the reviews decided to try this with a few additions. I did use two cans of clams, and I'm glad I did; even with that they seemed a little thin on the ground. I used 4 potatoes, which seemed just about right; I used 2 onions, rather than measure a cup. My crockpot cooks pretty hot, so I added the milk when I added the clams; after 4 hours on high. The milk and clams got about 20 minutes on high, 20 minutes on low, then we ate. Yum yum yum! One suggestion for a side; Garlic Cheese Quick Bread, from this site. I made this for my birthday dinner and was not disappointed! Thanks for a great recipe!

No-Cream Pasta Primavera

Reviewed: May 1, 2014
This is fantastic. I will announce right off the bat that I did not 'measure' a single thing in this recipe...was feeding only two tonight so went with what felt right :) The green beans and zukes at my grocery store looked awful so I omitted them. My red pepper was already roasted and in a jar, so I added it to the pan right before the pasta so as not to make mush out of it. Wanted to make nothing else so I put some bacon in the oven after the veggies came out, chopped and added to the concoction once done. Scrumptious, we both loved it, thanks for a fabulous combo of ingredients!

These are really good, and it makes a lot! I ran out of raisins so I topped off the measuring cup with dates.

Authentic Thai Coconut Soup

The best I've ever had. I did use chicken instead of shrimp, and subbed the zest of one lime for the lime leaves (made a half recipe). Can't wait to make it again!

This is delicious bread. I brought some to work every day for a week; every day I brought back an empty container :) Took closer to an hour and fifteen minutes for me.

Salted Peanut Bars

Reviewed: Apr. 29, 2014
These are awesome! Made a half recipe in my square pan. My nuts and butter were unsalted so I added a half tsp salt to the melty topping part--gotta have that sweet salty combo. Delicious, can't wait to share these, they are very pretty too!

Quick and Easy Brownies

Reviewed: Apr. 1, 2008
I made these while standing and chatting with a friend, and couldn't believe how fast they came together. (Couple beers had skewed my sense of time passage...) The taste is incredible. Made exactly as stated minus the nuts--boyfriend is allergic. No frosting needed! Sprinkled powdered sugar on top, more for looks than anything else. Everyone loved them. Just had one, couple days later, and they are still NOMMY! Update: Made these again with 'help' from my 5 year old. Still super tasty! Just wanted to add that I used about 1/4 c margarine and 3/4 light butter with canola oil, did not notice a change in taste or texture!

Lemon Poppy Seed Amish Friendship Bread

Reviewed: Apr. 23, 2008
Awesome. Everyone loved it. Added about a tablespoon of lemon juice because it was handy. Making again--great way to get rid of all my starter! UPDATE: Made medium sized muffins; takes about a half hour to bake, but they really don't rise very much. Tasty to eat though!

Top Shelf Margaritas on the Rocks

Reviewed: Jul. 17, 2008
My first time making a margarita. Yummy. I used lime juice in the sour mix since that's all I had, and I nixed the egg white. My only complaint is that the recipe makes odd amounts of simple syrup and sour mix...
