Salted Peanut Bars

These are awesome! Made a half recipe in my square pan. My nuts and butter were unsalted so I added a half tsp salt to the melty topping part--gotta have that sweet salty combo. Delicious, can't wait to share these, they are very pretty too!

Slow Cooker Kalua Pork

Ahhhh this is soooo good! My pork butt was 8 lbs and I'm glad I chose this recipe to have so much leftovers of! I left all the sauce ingredients the same amount, good thing too because that crock was almost full by the time all the fat and juices rendered outta that baby. My soy sauce was reduced sodium, and I forgot to put the green onions on till the last two hours of cooking. My Italian dressing started as a dry mix from this site, so 'homemade' I guess. The whole thing just Works. Yum!

Tropical Salad with Pineapple Vinaigrette

Loved this salad. Seems so simple, but the flavors are just different enough. I used apple cider vinegar in the dressing, and added garlic powder and parsley to it. Rather than tossing all ingredients, I built each salad individually (only serving two tonight!), leaving nuts off for allergic DBF and using honey roasted almonds on mine. He said it was an awesome salad :) (I'm not gonna tell him there was coconut on top heehee).

Raspberry White Chocolate Muffins

Delicious! Followed the recipe exactly, using frozen raspberries, then followed the directions for making a coffee cake. Poured batter into two loaf pans and cooked at 375; the throw away foil pan took about 45 minutes, the pyrex pan took about 40. Corners are a bit dark and crunchy so maybe 350 would have been better? Nice recipe overall.

Cream Cheese Frosting II

I've never met a cream cheese frosting I didn't like! This one was the perfect balance of cheese and sugar for me after adding a half cup extra sugar.

Chipotle Beef Tostadas

Recipe Group: everyone at the dinner table agreed that this was delicious! I cut the recipe in half, and the portions are very generous; had enough beef for 6 or 7 tostadas, not just 4. I'm not gonna lie, never used chipotle in adobo before, I was nervous because DS and I don't care for hot stuff...however, this dish was not spicy and DBF had to add salsa to his. Served with rice that had corn, tomatoes and cumin stirred in, very good and would make this again!

Rhubarb Margarita

Different and fun... I agree with the reviewers that found this almost too sweet. I ended up cutting my drink with some tonic water, which brought out more rhubarb flavor and downplayed the sugar. I used crushed ice instead of hauling out the blender.

Slow-Simmered Kidney Beans

Very tasty adult version of beanie weenies! I was using this as a main dish so used more meat than called for. Also used a jarred roasted red pepper instead of fresh. My bacon was honey maple flavor, and overall the dish was sweet but I did not find it too much so. I scaled the recipe to 4 servings and the lot fit in my 2.5 qt crockpot. Great way to warm up on this icky rainy 'spring' day.

Cheesy Bacon Muffins

Yum yum yum! The only change I made was to add 1/8 tsp onion powder. My bacon was honey maple flavor and these muffins tasted awesome! First time using my brand new oven, took exactly 20 minutes for me. So light and fluffy and delicious, thanks for this recipe!

Most guests seemed to enjoy it, I found it crazy-sweet! I poured the syrup into half-pint jars before refrigerating so I can just grab one...don't like measuring the sticky stuff :) I used Seagram's ginger ale.

Lavender Shortbread Cookies

Very good! My mix was very very dry, however... I had to add a T of cream to make it stick together. But easy to work with and wonderful texture in the finished result. I made them for St. Patty's Day so I brushed the cookies with water and sprinkled them with dark green, light green and gold sugars before baking. Also I used dried mint and lavender, using half of the given amount.

Chicken Breasts in a Sour Cream and Wine Sauce

This was fantastic! I used fresh mushrooms and chicken tenderloins. Served over parsley noodles. Update: Made this again, served with rice, delicious. I used fresh mushrooms again, and this time, after browning the bacon I used the same pan to brown the chicken (I used less butter and left all the bacon grease in there). I also greased my baking dish with bacon grease --hey, free flavor! I convect baked at 425 for about 50 minutes. I also had a bunch of other dishes going on so I used instant rice :) Thanks for sharing this great recipe!

Pumpkin Gingerbread

Very easy, very delicious. Almost overflowed my two metal pans...topped with cream cheese frosting for an extra special touch. Update 8/2014: Made this today, half recipe in my Pyrex pan. Used 1 c sugar and 1/2 c brown sugar. Convection baked at 325 for just over an hour. So yummy!

Dumplings

These turned out great. Next time I will use more liquid...two cups of broth was pushing it. But the dumplings did thicken up the liquid wonderfully and they were light and delicious, thanks for a wonderful egg-free dumpling!
