Potato Soup VII

Reviewed: Oct. 12, 2009
Great flavor, although I did add a few extra touches. Some herbs, garlic powder, plenty of salt, and fresh parsley and chives to top it off! Made a great meal with some fresh bread. Next time I will probably add extra bacon to please my man :)

Pepperoni Bread

Reviewed: Oct. 12, 2009
Easy to make, tastes o'k. 40 minutes is way too long though; mine was a bit dark and crunchy.

Cuban Water Bread

Reviewed: Sep. 29, 2009
Turned out amazing! I cut the recipe in half, which calls for 4 cups of flour. I could not get even 3 1/2 cups in; I tried and tried! The first 2 cups were bread flour, the third was whole wheat pastry flour, and the rest was all purpose. Nice crusty outside, soft on the inside, smelled and tasted wonderful! Next time I will make the whole recipe :)

Rich and Creamy Tomato Basil Soup

Reviewed: Sep. 15, 2009
Very very good. I had to use milk instead of cream, and I also had to halve the butter. I upped the basil and used about 8 romas because mine are small. Great flavor that got a genuine compliment from DBF; thanks!

Applesauce Doughnuts

Reviewed: Sep. 15, 2009
Excellent flavor! But there must be a trick to adding the batter to the oil; most of mine just imploded and became snakes rather than balls. I added cinnamon sugar right after pulling them out of the oil...Mmmm!

Blueberry Oatmeal Scones

Reviewed: Sep. 15, 2009
These were good, I did make a couple changes. I used whole wheat pastry flour and I added a little bit of brown sugar. Also left out the pecans, and after the milk wash I sprinkled a little white sugar on top. I was kind of surprised but my boyfriend enjoyed them :)

Best, moistest brownie ever! I only changed one thing; I left out the nuts. Doubled the recipe and still may not have enough! Thanks for a wonderful recipe!!

Slow Cooker Chicken Taco Soup

Reviewed: Aug. 12, 2009
Very tasty! I put my chicken in frozen, and after 3 hours took it out and diced (personal preference to shredded). I used Sam Adams Boston Lager for the beer, and frozen corn instead of canned. I used the Echols taco seasoning recipe in the first review, but went a little light on the crushed pepper flakes and chili powder (neither my son or I like very spicy foods). Everything else was as stated. Great flavor, not too spicy (I was worried about all the canned chilis in the tomatoes). I liked it best with lite sour cream stirred in to make it creamy. Also made a great dip for the 'Hint of Lime' tortilla chips! Picky boyfriend ate quite a bit, so I know he liked it!

Southwestern Dough Gods

Reviewed: Aug. 12, 2009
Very tasty but way too salty. I did add a half teaspoon of sugar (I made a half batch) and used frozen corn. Next time I'll try them with about half or less of the salt. Also, took almost double the stated time to bake.

Light and fluffy, I halved the recipe and made about 8 smallish muffins. Didn't have any leftovers so they must have been yummy! Didn't change a thing :)

Chicken Fettuccini Alfredo

Reviewed: Aug. 10, 2009
Best comfort food ever! So nice and creamy. I used all whole milk and only had mozzarella cheese; portobello mushrooms were on sale and if you can, use them! Sooo tasty. UPDATE: Made this again and this time I roasted the chicken on a bed of garlic and seasoning; I had to use canned mushrooms and only had 2% milk. For the cheese I used an Italian shredded blend and some parmesan. Turned out very good with some fresh basil sprinkled on top.

Mama D's Italian Bread

Reviewed: Aug. 10, 2009
Great flavor. I halved the recipe and made two medium sized loaves. Think I overcooked it a tad because the crust was a little too thick; I've never sprayed my bread with water while cooking and I must have overdone it. Update 7/2014: Made this again, cut the recipe in half again. Cooked on my pizza stone in convection oven (425)... Did stick a bit to my stone, not enough cornmeal around the edges :) made three smallish loaves, which got too wide and stuck to each other so I had tender edges, soft and yummy and made a great meatball sammie! Only took 15 or 20 minutes, sprayed at 5 and 10 minutes.

Pesto Mushroom Chicken

Great stuff! The only change I made was to sub pine nuts for the walnuts. Oh and one tablespoon of the oil in the pesto was walnut oil. :) No leftovers!

Heart's Delight

Reviewed: Jul. 31, 2009
Awesome! I halved the recipe and did not do the pink heart thing :) Also subbed vanilla for almond flavoring. Cookie alone is great, nice light texture and not too sweet; frosting is wonderful. I think I will make this frosting for other cookies in the future; it has such a nice smooth texture, pretty creamy color, no funky powdered sugar taste. Definitely give these a try!

Pork Chops Stuffed with Smoked Gouda and Bacon

Reviewed: Jul. 29, 2009
Pretty good! It was a big hit with my boyfriend's family. I changed the serving calculator to 8; I had four really thick, large boneless chops. I cut each one in half and they were the perfect size for a serving once stuffed with the filling. The filling! Everyone kept eating it out of the bowl before I could finish stuffing the chops! I did have some left over also, the plan is to make scrambled eggs for breakfast tomorrow and use up the extra stuffing on them. Mmm, can't wait!

P.J.'s Fresh Corn Salad

Reviewed: Jul. 29, 2009
Huge hit! Made this while visiting my boyfriend's family and they all loved it. The only change I made was from red onion to green; raw red onion is a little strong for my taste. I didn't really measure the dressing; topped with some cracked black pepper and voila!
