Delicious and comforting :) I used cream of onion soup, amazing! Reminds me of Cracker Barrel's hash brown casserole. Update: Made this again, scaled the recipe to 8 servings. Used a 26 ounce bag of potatoes, 1 can of cream of potato soup, about half a container of sour cream, and about a cup of shredded mozzarella. Used just enough romano cheese to make a golden crust on top after baking. Filled two 8 inch square pans (makes for thinner crispier pieces which I prefer) and froze one; will update again when I bake the frozen one. The one I baked up tonight (took about 50 minutes) was DeLiCiOuS!
