Good for You Greek Salad

Mmm I loved this salad. I used the green onions recommended by the submitter, and my olives were kalamata marinated in wine and herbs (just on my half, none for DBF!) I found this very refreshing and a beautiful presentation (I sliced instead of chopped and layered instead of tossed). Going into the summer rotation of 'too hot to cook and must get rid of the cucumbers' :)

Blueberry Summer Squash Bread

So delicious! I made this so my son could have a nice after school snack, he loved it! I enjoy it for breakfast, warmed in the toaster. I used double blueberries and no walnuts. The only blueberry syrup I could find was Smucker's, so perhaps that's why my bread is sweeter than I was expecting. Thanks so much for the recipe, HannahRose!

Linguine with Summer Squash, Tomatoes, and Basil

Good dinner! I loved the quick prep and minimal heat for these hot, humid summer days! I personally found it too much raw garlic...but I still had seconds :) I couldn't find a 16 oz package of pasta so I got two 9 oz packages, and it was waaaay too much; I put about 1/3 aside for another meal. The portions are very generous, think this could easily be 6 main dish servings. Thanks so much for the recipe, JJLuke!

Aunt Kate's Green Beans in Tomatoes

Very flavorful for so few ingredients. I never would have thought to cook my fresh green beans IN tomato sauce :) I drained a little of the juice out of my can of tomatoes, then (because I saw some of the herbs go down the drain with the juice!) added a dash of Italian seasoning. I just heated up the tomato mixture a bit before throwing the beans in there; they took longer to cook than I had thought so I'm glad I did. Love this recipe topped with a little fresh basil for kicks, thanks so much BARBIANN!

Summer Squash Bread

Yummy! I've only ever made zucchini bread before. I shredded and 'drained' my yellow squash like I would for zucchini, but turns out I didn't need to, there was no liquid. I followed the recipe and the only thing I might do different next time is to reduce the vanilla, maybe a bit less sugar--this is very sweet for a quick bread. I like doing it in a 9x13 because it didn't take as long as a loaf would have to bake. Thank you Unforgetable for the recipe!

Simple Basil Butter

After I scraped this out of the food processor, I couldn't help but lick the spatula...oh, yum! Great flavor. I used half the salt called for, and my butter was unsalted. Put it on tonight's veggie medley but want to try it on some good fresh bread--will be keeping some of this on hand all summer, thanks so much for the recipe!

Blueberry Monkey Bread

This was very good but I did make one big change; I used fresh strawberries in place of the blueberries. My son requested monkey bread 'with strawberries and cream cheese' for his birthday brunch, so I also topped the whole thing with cream cheese icing. Lucky's Quickie Chickie

Wonderful flavor! I was afraid to try this recipe on the family--DS doesn't like balsamic vinegar, DBF doesn't like 'sweet' meat--but it turns out the combo is a hit for both of them :) I scaled the recipe to 4, which would be 12 ounces of chicken, which once weighed was 4 strips of tenderloin...that wasn't enough for the three of us! Next time I'll make a whole bunch more :) Thanks so much Lucky Noodles for sharing your recipe!

Raspberry Vinaigrette II

Way too easy to be so good! Loved the mint, somehow it went so well with our salad. This will be a great summer staple. I did add a Tablespoon of oil because it seemed weird to me not to have some oil in a dressing. Thanks for the recipe, PantryGatherings!

Peach Salad with Raspberry Vinaigrette

Parmesan Asparagus Rice

Decadent! I only had the microwave pouch of basmati, so I added it to the pan after sauteeing the onions, garlic and asparagus and just heated it up to temp. The directions have garlic but the list of ingredients doesn't; I guessed and used two cloves. This was a great side dish and easy too, thanks for the recipe CookingNut!

Zucchini Scallion Frittata Cups

Yummy but very hard to get out of the pan! Used a pastry brush and veggie oil to thoroughly grease the cups too. Convect baked at 350 for about 25 minutes. Would add salt next time too.

Honey Mustard Chicken with Pretzel Crust

This had fantastic flavor! I subbed white wine vinegar for the red, and my pretzels were Trader Joe's honey wheat...great combo! Not as crispy as I had hoped but think it could have been the pretzels. I convect baked at 400 for 12 minutes, flipped, and went another 8 minutes or so. Perfect juicy chicken, thanks for the recipe Kathleen!
