Jalapeno Popper Mushrooms

These are great! And different from your standard stuffed mushroom. The only change I made was to add a couple of tablespoons of panko breadcrumbs to the mixture just to absorb any extra water from the mushrooms and sprinkle a few panko on the top of each shroom. It was easy and quick to make these. Also, I made them a few hours in advance and popped the cookie sheet in the fridge until I was ready to make them and that worked out well. I will definitely be making these again. SO GOOD! Oh, and I second the advice of another reviewer who suggested doubling the recipe because otherwise you WILL end up duking it out over who gets to eat the last one of these!

Parchment Salmon Packages with Asparagus

This is a delicious and easy recipe that I will make again and again. I followed it exactly and the only change I will make next time is to use a little less tarragon, but that's just a personal taste. The fish came out beautifully - moist and flavorful. The asparagus was delicious also. And using the parchment was fun to do and made the presentation of this, frankly easy, meal really seem like something special and exciting. Thanks so much for posting it!

Fast and Friendly Meatballs

This is a great basic recipe. We used 99% lean turkey but added moisture and flavor by adding some spaghetti sauce and some grated parmesan cheese. Delicious!

Tuscan Bean 'Goppel'

I made this last night and it was delicious ! It went very well with the broiled tilapia parmesan from allrecipes.com. The only changes I made were to add a couple of dashes of cayenne pepper and also to put in a bit more garlic and red pepper flakes than the recipe calls for. Definitely a quick, easy, healthy side dish. Will make again for sure!

Broiled Tilapia Parmesan

This was wonderful and so quick and easy. Will definitely be putting this on the regular rotation. I made only the following changes - added some fresh parsley to the topping and sprinkled some bread crumbs over the topping to create more crust (as recommended by other reviewers.) I might try substituting different white fish next time depending on what's on sale at my supermarket. Really a wonderful recipe! Thanks for sending it in!

Cheesy Italian Tortellini

This was great! I made a couple of modifications based on other reviewer: added one finely diced onion, extra can of mushrooms, added a generous amount of garlic, oregano and dried Italian seasoning. Also, instead of adding the cheese to the slow cooker, I just put the sauce/tortellini in a glass baking dish and browned the cheese on top in the oven. I doubled this recipe and saved the extra sauce in the freezer. This will become a regular recipe for us - it was easy and delicious! Thanks for sending it in!

World's Best Lasagna

This really was the world's best lasagna! We made only a few changes based on other reviewers' recommendations. We used hot Italian sausage instead of sweet. We didn't add any salt at all to the recipe. We used fresh basil and lots of it and extra garlic and Italian seasoning. We will definitely be making this again. Also, I think that next time I make this I will make a lot of extra of the sauce mixture to freeze and use over pasta for weeknight dinners. It was that delicious!

Ricotta Cheese Cookies

These are wonderful! I added some extra vanilla extract but otherwise followed the recipe exactly. The batter had a great texture and was easy to work with. Very cake-y texture and a great base for additional flavors. I iced some with confectioners sugar with lemon extract and added sprinkles and I iced others with confectioners sugar mixed with amaretto and a dash of almond extract and sprinkled with chopped almonds. Both were big hits and I've had quite a few requests for the recipe. Thank you very much for sending in this recipe!

Tomato-Curry Lentil Stew

We loved this recipe. I did make a few changes: added carrots, potatoes and cayenne pepper. Also, instead of water, I used chicken broth and upped the amount. I didn't have stewed tomoatoes so I used 1 can crushed and 1 can diced because I had them on hand. I upped the curry and the garlic and onion. We served it with red wine and crusty french bread. I will definitely make this again and might add escarole at the end next time. Thank you very much for posting this healthy and delicious recipe!

Eggplant Parmesan I

This was wonderful and was a big hit. I made a few changes based on other reviewers suggestions. I sliced the eggplant about 1/4 inch thick and allowed it to sweat for about 2 hours. I also cut way down on the oil for frying the eggplant - just a smidge in a non-stick pan. I used my own homemade sauce. Although not difficult per se, there are quite a few steps to this recipe and I wanted it to be worth the time, so I made several smallish tins of it and froze them. They defrost great and are a wonderful and quick work-night treat! Thanks for sending this in - it will certainly become one of my regular dishes!

Maria's Broccoli Rabe

This was tasty and I'll make it again - but with less oil and maybe half as much time boiling. The boiling seems to remove much of the bitterness from the broccoli rabe, although there's enough bite left that it still tastes like broccoli rabe should taste! However, although the flavor was great, the texture got just a little mushier than I'd like. Also, mine came out a little oily and I would cut down on the oil next time. That said, I really liked this recipe and I will definitely make it again. Thanks for sending it in!

Cheesy Zucchini Casserole I

This was delicious! I've made it twice in one week - at the request of a non-veggie lover! The first time I followed the recipe exactly and it was tasty but didn't hold together firmly. The second time, I followed advice from some other reviewers and used unseasoned stuffing mix instead of cubed bread and I also upped the spice with more garlic and some cayenne pepper. It held together better the second go round. This dish is ideal to bring to a pot luck - everyone will enjoy it. I'll definitely be adding it to the regular rotation!

Spicy Slow Cooker Black Bean Soup

What a great recipe! Nice and spicy and full of flavor - the house smelled wonderful all day. I used fresh jalapenos and added a little extra cumin. I like a mix of creaminess and whole beans, so I blended half of it and mixed the two parts together again. I served it garnished with a dollop of sour cream and a sprinkling of cilantro. I will DEFINITELY be making wonderful soup again - thanks for sending it in!

Chicken, Rice and Vegetable Soup

This soup was great. I really wanted a simple chicken rice soup and this was perfect. I changed a couple of things: I used equal parts water and canned chicken broth and more chicken than the recipe called for. I sauteed the chicken with a little salt and pepper before adding to soup and I added a little bit of extra rice. My husband loved it and commented on how wonderful and homey it smelled after walking in from the cold. Thanks for submitting this recipe!

Fresh Tomato Salsa

I just tried this recipe for the first time. It was great!I couldn't find serrano chili peppers so I used 3 jalapeno peppers (with seeds removed) and it had a nice kick without being overpowering. I also upped the cilantro just because we're cilantro lovers. This was my first attempt at salsa and it was so easy and so delicious that I'll never go back to buying it! Thank you so much for submitting this recipe!

Cinnamon Pear Frozen Yogurt

Thank you VERY much for sending in this recipe! It was wonderful - a huge hit even with non-pear fans. I added a smidge extra cinnamon and allspice. It was so refreshing and so flavorful and unlike any ice cream or frozen yogurt I've ever had before - and it was super easy to make. I will definitely be making this one again!

Poppy Seed Cookies I

I just made these cookies and they were fine but a little plain - a basic sugar cookie with some poppy seeds for added texture. They did come out nice and crisp. I probably won't make them again - they were not bad in any way but somehow not quite flavorful enough.

Cinnamon Bun Scones

These are very good. I've made them twice - substituting almonds for the pecans and adding a 1/2 tsp of almond extract to the dough. They're a little more moist than I usually like my scones, but they have a great flavor and the cinnamon swirl effect and the icing really make them look like something special! Tomato Curry Chicken

Slow Cooker Beef Stew IV

I've made this a couple of times now and it's been a big hit. I did add a few more spices (rosemary, garlic and tyme) and throw in extra veggies and some celery.
