Creamy Rice Pudding

Yum! I just made this, first sauteing the rice in the butter before adding the water as was recommended previously. I also didn't add the sugar until the rice was tender and added some minced candied ginger and orange zest to the pudding with the sugar. Make sure you temper the beaten egg and milk mixture! Will definitely make this again!

Best Peach Cobbler Ever

I made this with 3 very ripe peaches and omitted the butter and water in the peach mixture. Since there was no extra liquid, I dumped the entire mixture into the batter. I was out of white sugar (darn roommate!) so I substituted with light brown sugar. Added a little vanilla extract to both mixtures. This wasn't as sweet as I'm used to, which isn't a bad thing, and definitely tastes delicious with vanilla ice cream.

Apple Crisp II

I made the recipe pretty much as is (except I used softened butter instead of melted butter) and everyone loved it. It worked especially well with vanilla ice cream. The next time I make this, I'd probably tweak the following: substitute 1/3 cup orange juice for the water, substitute half of the white sugar for light brown sugar (and probably use less sugar overall), and add the nutmeg to the apple mixture. If I wasn't going to serve this with vanilla ice cream, I'd probably want to add a little vanilla extract too.

Truly Key Lime Pie Ice Cream

I too experienced a "chalky" texture with the end product. This is a relatively expensive recipe, but for my Cuisinart ice cream maker, this recipe makes a double batch.

Banana Bread I

Bananas Foster I

I like to serve this a la mode. I also soak some raisins in orange juice for a few hours and use that instead of the lemon juice. The raisins will get plump with the OJ and it makes for a very interesting texture and taste.

Key Lime Pie V

I have made this recipe using fresh key lime juice and it is absolutely delish. After this key lime pie, I can't go back to the ones with gelatin and meringue. The only thing is, this one doesn't set perfectly and will be slightly wobbly. So I agree that this is not one to serve to company; this is one that you'd make and it all by yourself. =)

Puppy Chow

I like this recipe because it doesn't have the butter that all the other ones seem to have. I use Crispix, a whole bag of choc. chips, and melt it in the microwave. The hardest part about the recipe is remembering not to inhale when throwing a handful of the puppy chow into your mouth. I'm always coughing on the powdered sugar!

Chinese Cabbage Salad I

I used toasted slice almonds instead of the cashews and added a dash of sesame oil and the packet of ramen seasonings to the dressing. Definitely wait until the last minute to add the dressing to the salad; it gets pretty soggy if you add it too soon.

Spinach Dip I

S'more Brownies

Instead of the choc. bar I just used semi-sweet choc. chips. I also left out the graham crackers from the mixture and just layed the out on top of the brownie after it came out of the oven. Using a 9x13 pan, I fit 28 of the rectangular graham cracker pieces leaving a little room in between each piece. After it cooled completely, I cut out the brownies according the graham cracker pieces and ended up with 28 "bars".
