Chopped Cashew Salad

This is soooo good! I've made it twice now and my husband and I both love it! And, it gets better with each day it's in the fridge! I was skeptical of the grapes at first, but the combination was perfection! The only changes I made was, I used cracked pepper and a little fresh lemon juice because I didn't have lemon pepper, and I used a little less olive oil to cut down on fat and calories. Thanks for sharing this delicious and healthy recipe!

Super-Delicious Zuppa Toscana

This soup is nothing short of AMAZING!!!!!! I've made this twice so far and the second time was for a group of about 20 to 25 people. Even the children were coming back for seconds and thirds!! EVERYONE raved about it! I took the advice of some of the other reviewers and rinsed the sausage in really hot water to keep it from being orange and to get rid of some of the grease. I also used kale (a lot of it) since that's what the famous restaurant uses and no one complained, not even my husband and kids who dislike kale. Other than that, I followed the recipe as written. I tripled the recipe to feed the group and everyone had plenty and we had some to take home!!! Thank you so much for sharing this reccipe :)

Chicken Scampi II

This was AMAZING....and really easy!!! I have 3 year old twins and a busy schedule so I'm all about easy!! I did use the suggestions of others and doubled the sauce and added white wine. I also added the garlic the same time I added the chicken for fear of burning it. I used chicken breast tenderloins and dredged them in flour before adding them to skillet. I served it over whole grain spaghetti that I also added to the skillet after draining to soak up some of the sauce and it was delicious!! My picky husband and kids raved over it!! They even told me I was the best mommy in the whole world lol!!

Jenny's Grilled Chicken Breasts

Made this tonight and it was great!!! I was careful not to grill the chicken too long like I usually do and it was so juicy and delicious!! No BBQ sauce needed! I didn't have onion powder though but I did have dried onion and used that. Hubs and the kids loved it too :)
