Addictive Sweet Potato Burritos

These were tasty, but it took so long to cook the sweet potatoes (baked in the oven), that I will probably not make them again unless I have leftover sweet potatoes from another side dish. Does anyone have a suggestion for a faster way to cook sweet potatoes? I liked the spice combination. I'll save the recipe, but it won't be an "absolutely-must-have" for the menu rotation.

Butternut Squash Bisque

I made the recipe as written, without the optional heavy cream. I liked it well enough, wasn't bad, but wasn't outstanding. I will try reheating the leftovers tonight and adding an apple like another reviewer suggested.

Iced Pumpkin Cookies

These were great! And a lot easier than I thought it would be! I usually burn my cookies, but these were so moist that I would've had to really overcook them in order to burn them! Made about 3 dozen. i didn't have enough vanilla for the glaze, but it still tasted fine.

Quinoa and Black Beans

This recipe was okay. I used plain water instead of vegetable broth, though, which may have led to the lack of flavor. This is the third time I've ever tried quinoa. Still not sure if I like it or not. The plus side of this recipe was that it was a cheap and easy way to stretch out the quinoa, which is expensive compared to rice/pasta.

Spinach Quiche

I made some changes to this recipe, which is probably why it didn't taste good. I didn't have any cottage cheese, so I tried using plain yogurt. Big mistake. I also used a regular yellow onion instead of green onions. Should've sauteed them first before baking. On the plus side, the quiche did look beautiful and browned quite nicely. I used my cast iron skillet, and it did not stick at all. I might make this again, except using either cottage cheese or sour cream, like another reviewer did.
