Pretzel Turtles

Grandma's Lemon Meringue Pie

Pumpkin French Toast Bake

Beth's Spicy Oatmeal Raisin Cookies

This is an excellent cookie. For those who may not agree, you might be looking at a different box - mine is the old fashioned cooking oats. Either way - these are great. NOTE: you will have more flavorful raisins if you do this: place the cup of raisins in a small bowl, fill with water and microwave until the water just comes to boiling. Drain the raisins in a mesh colander and you will immediately smell the wonderful flavor that has been released and even a hint of vanilla. I did not change any of the ingredients or quantities, however, I did play with the size of the cookie because I have boys and they want something more than a small bite. I used a 1/8 cup measure leveled for each cookie, and baked for 12 minutes (6 on the bottom rack and 6 on the middle rack). If you use a silicon mat which I HIGHLY suggest, the cookies will never stick and you can let them cool on the rack completely if you want. I left mine for 6 minutes because of the cook time.

Herbed Twice-Baked Potatoes

My guys loved this, but I thought it was a bit dry. Maybe it's just me because I have never been a fan of twice baked potatoes, but it doesn't stop me from trying new recipes. Maybe next time I'll add more butter into the filling.

Rhubarb Stir Cake

I cut the recipe in half and put it in an 8" square baking dish because the 9 x 13 is more than I need for a family of 3. For those of you curious as to how I used 1/2 an egg, I just replaced the egg with eggbeaters. This was a great way to use rhubarb which we just love, so I'm always looking for new ideas. I too used cinnnamon for the top with the sugar and nothing else. It is very sweet so maybe next time I will cut down on the sugar amount. As others have commented, it is better the next day and has a consistency similar to a bread pudding vs. a cake.

Slow-Cooker Chicken Tortilla Soup

Absolutely delicious. This was by far the easiest, best tasting chicken tortilla soup that I have ever made. I too, placed the chicken right in the slow cooker raw. I used 3 boneless chicken breasts, and ended up shredding only 2 as that was plenty. We had one on the side and it was ever so juicy. Can't wait to make again.

The Great 'Pumpkin-Tini'

I love most things pumpkin, so I was intrigued by this recipe. The first time I made it with pure pumpkin - don't make that mistake, it was horrible. The recipe should have emphasized to buy the pumpkin pie mix. I add 2T of fat free half and half and sprinkle cinnamon on top of the whipped cream, and it is quite nice! You could add cinnamon sticks if you are entertaining.

Strawberry Pie II

This was the dessert I made for my son's birthday - and he LOVED it!! I did make a few changes - more strawberries, 2/3 c sugar and 2/3 c water. I think it's best to determine the sweetness of your strawberries and then adjusting the sugar accordingly. While the remaining strawberries cooked in the sugar and water, I used an old fashioned potato masher to mash and break up the strawberries. (I can jellies, and do this for many fruits). It worked well to bring a nice consistency to the mixture that you pour over the strawberries in the shell. We used whipped cream to top each piece of pie as we slice it.

Angel Hair Pasta with Shrimp and Basil

I can't count how many times we've made this recipe. My husband had a similar dish at a restaurant, came home and described it to me and asked if I could find that recipe. Well this one is the closest we've come, and has become a household favorite. My husband makes it most of the time, and I refer to it as "his specialty". We use fresh tomatoes instead of the canned - love the fresh vegetables and spices. YOU MUST use fresh basil and parsley for full flavor! We use about 6 large roma tomatoes to keep with the fresh ingredients. Never hurts to add a little more garlic either :-)

Grilled Marinated Swordfish

This is excellent! The swordfish has a wonderful flavor from the marinade. I used a large ziploc bag to marinate the fish, and just squeezed out all of the air so the marinade had no where to go but into the fish. Prepared on a grill and served with asparagus and wild rice - this was delicious!!! All family members said this was a keeper.

Concord Grape Pie III

I didn't have Concord grapes, but a very large container of dark seedless grapes that my DH bought at our warehouse club. There were more than we could east so I decided to make this pie. I cut each grape in half lengthwise and squeezed them as hard as I could into the pan, skins included. Then I followed the recipe as provided. The pie turned out delicious! I was surprised at the flavoring as it had almost a rhubarb hint. I had never heard of grape pie previously, but now I have a new recipe in my book!

Sweet Dinner Rolls

These are super easy with an excellent sweet bread taste. But they are not too sweet to make into other types of rolls. I made these twice now as sandwich buns. After removing from my bread machine, I use my food scale and weigh 2 oz. of dough each. This makes about 18 buns. Shape into buns, let rise and bake as directed. I didn't even use the additional butter and they were delicious!

Cranberry Orange Loaf

This was a fantastic tasting cranberry bread. Made it at Thanksgiving, and we devoured it quickly. Mine took longer to bake as well - just don't take it out until the toothpick test comes clean. Since every oven varies, it's hard to say how long you should bake yours. I love the taste with fresh cranberries, yet the bread was not too tart. Some of my family likes their slice with a dab of butter or cream cheese - YUMMMMMY!!!!!

Roasted Pork Loin

This was absolutely awesome, and quite tender. I agree - don't go by the clock to test the doneness of pork - use a meat thermometer. Typically, people overcook pork, and it ends up dry or stringy. This one cooked to perfection at the correct temperature is ohhhh sooo tasty. We loved it!

Grandma's Green Bean Casserole

I agree that this is better than the cream of mushroom soup version, but we really didn't like it that much. Followed the recipe exactly - didn't make any of the recommended changes or additions. It's just OKJ - won't make again.

Cape Cod Oatmeal Cookies

Sorry, this cookie was just OK. I was disappointed in the shape of the cookie, as it spread out way too thin and got brown around the end. The taste is OK, however not consistent throughout - it's crispy on the ends and chewy in the middle. I didn't think they looked right before I baked them, as the dough was way too wet. Since I am a big baker around the holidays I try new recipes throughout the year. This one won't make the list as it doesn't even look appealing.

Alice Chicken

This was just OK. I'm really not sure what all of the excitement is about with this recipe. To me it tastes like a recipe that you would find on a bun in some restaurant chain. I wasn't too thrilled by the taste. My husband said it was just OK, and he certainly wouldn't request that I make this again. Only my son (12) liked it, but then again he would enjoy something like this at one of the chain restaurants. A disappointment to me, as I find too many recipes here have 5 stars and they are just average. I'm beginning to wonder if folks have never eaten really, really, good food.

Sour Cream Refrigerator Mashed Potatoes

These couldn't be simpler! I made them for Thanksgiving and feared that my college son might not like them - he is our mashed potato king! He loved them. I was so happy to be able to make a side dish ahead of time. I made them again tonight so they will be ready for me to use Christmas day. I liberally added garlic salt in the boiling water - this gives a little more flavor to the potatoes. Again, I'm pleased to save some time away from the kitchen during a holiday. Thanks for sharing this delicious and easy recipe!
