Spicy Sweet Potato Soup

I subbed evaporated milk for sour cream, sriracha for pepper flakes, and tahini for peanut butter. Used roasted sweet potatoes because I wanted to do something with leftovers. Excellent, thanks.

Key Lime Pie I

Closely resembles the frozen key lime pie at the Lime Inn on St. John USVI. Even with storebought graham cracker crust and canned whipped cream, we thought it was excellent. My family likes it fully frozen; I let my slice defrost a bit first. We prefer this lighter texture over the typical custard.

Ranch Dressing II

I substitute 2/3 c milk + 1 T lemon juice for the sour cream. This adds a brightness to the flavor that I prefer over buttermilk and/or vinegar, and it's more pourable. Let this mixture stand for a few minutes before adding anything else. I increased the pepper and dill a bit, too. The family loves it. Thanks!

Perfect Turkey

If you have a frozen basted turkey, or a kosher turkey, yes, you should skip the brining step. You'll still get great results from cooking it upside down for most of the cooking time. I actually turn mine twice - 1/3 of the time with one thigh up, 1/3 with the other one up, 1/3 with the breast up. Silicone oven mitts are good for turning it over - be sure to have a helper hold the pan and rack. I make some extra stock to use in the stuffing and gravy by cooking the neck and wings, with a few herbs and vegetables, in a pot on the stove.

Microwave Caramel Popcorn

I need to cut back on the time a little, it tasted a little burned -- but microwaves vary. Otherwise, it's a really great way to make this.

Chicken Makhani (Indian Butter Chicken)

Excellent. If the sauce is too peppery, try a different garam masala or mix up your own. One of the commercial ones is mostly black pepper, another is mostly salt! I prefer one that has more cumin, cinnamon and coriander. I used a can of evaporated milk instead of half and half.
