Chicken Satay With Peanut Sauce

I make this recipe often. I marinate the chicken overnight and I find the chicken is more tender and flavorful. Also, I use chunky peanut butter in the dipping sauce which gives it a nice crunch. I cook my rice with coconut milk and water and serve the chicken with lettuce leaves for wrapping. One bite and you feel like you're in Thailand! Delicious and makes for good leftovers. curry and peanut butter = yum!

Angel Chicken Pasta

I had never used Golden Mushroom soup until I came upon this recipe, and now I keep a can of it on hand at all times. The flavours in this soup are sinful. I would recommend adding 1/2 cup of chicken broth as suggested by other members. Also, to soften the cream cheese before adding it to the sauce as it does take forever to blend otherwise. I didn't have the cream cheese with chives so I added some fresh chopped chives and it was delicious. This is such an easy dish to make and is always well received. It is excellent for leftovers too. I am so glad I found this recipe because it is SO good!!

Banana Pancakes I

Yummy yum yum! What a great way to use your too-ripe bananas. I added a pinch of cinnamon as suggested and they were sooo good. My picky hubby said they tasted like banana bread and a cinnamon bun in pancake form. I cooked them in Vegetable oil in a cast iron pan which made the outside so crispy and delicious. We had them with maple syrup, whipping cream and few sliced bananas on top. It was more like dessert. They were gobbled up in 10 minutes flat. So moist, fluffy and delicious. Thanks for sharing!

Stuffed Jack-O-Lantern Bell Peppers

This was so fun to make. I love the idea of making the peppers into little jack o lanterns. Even my husband said they were cute. I stuffed my peppers with left-over white rice, cooked ground pork, basil marinara sauce and lots of cheddar cheese. But I would think you could stuff them with whatever ingredients you have around. Yum=mee!

Pumpkin Spice Cupcakes

I made these cupcakes last week and got RAVE reviews. I didn't have 3 cups of icing sugar, only 2 1/4 cups which made the icing taste more cream-cheesy. Everyone commented on how yummy the icing was. I would make this icing for cinnamon buns, spice cake, coffee cake...it is deeelicious. Also, I used canned pumpkin, not pumpkin puree. Not sure if this made a difference but the consistency of the cupcake was dense, more like a loaf than a cupcake but still so good. The kids gobbled them up! Thanks for sharing this wonderful and tasty autumn treat. This will be an annual tradition for sure!

Delicious Chicken Casserole

So yummy. I would classify this dish under the 'comfort food' category. I used crushed corn flakes instead of crackers, the crunch adds texture and flavour. I also used one can of cream of chicken and one can of cream of broccoli. I added freshly grated cheddar cheese and fresh broccoli but forgot to pre-cook the broccoli and the cooking time in the oven was not enough to make it tender. I will be sure to make this again!

Bowties with Italian Sausage in a Cream Basil Sauce

This recipe is kick-as*! It gets thumbs up every time I make it. If I want to impress someone, I make this. You will not be disappointed. The flavours are incredible. Even for my fussy "I don't like sausage" eater, she eats it and says it's good!

Pesto Cream Sauce

Very tasty sauce! My family raved about this one and now it is a requested supper dish. I made some adjustments as recommended by other members such as, less butter and oil, frying the mushrooms in the butter mixture (to make them crispy and delicious) and creating a roux. I also purchased an already-made pesto mixture from Sobeys (it's really good). Pine nuts are expensive and so this option is more affordable and tasted just as great. I use linguine when I make this sauce but penne would be just as good. Save some shredded romano for the end and sprinkle it on top. Voila!
