Breakfast Upside Down Cake

I turned this into a breakfast casserole and not upside down as I didn't have a round cake pan and read all the reviews about how the yield was too big. I put it in a 9x13 rectangle pan. I can't believe they didn't tell you to add any spices or seasonings to the vegetables. I added a bit of everything to them while they cooked, and some beef broth because they were starting to get brown before it was all cooked. I threw in some cilantro and parsley too. I followed the other raters advice on making it backwards, and added more egg and milk. I used egg substitute and almond milk. We don't eat bacon at my house, so I used deli sliced turkey. I used 3 cheeses on top- feta, italian blend, and colby jack. I also cooked it at 375 for 25 minutes. Came out great!

Granola

I made the servings smaller, since it was just for me. I used apple instead of banana, and put in honey, cloves, nutmeg, and extra cinnamon as someone suggested. I bumped the oven temperature to 300, and cooked for 40 minutes stirring every 15 minutes. Came out perfect!

Weeknight Wonton Soup

I could not find frozen wontons, and searched 2 grocery stores. I used P.F.Chang's frozen dumplings instead. The soup was alright, but tasted nothing like wonton soup at Chinese restaurants. It just tasted like beef broth.

Flavorful Beef Stir-Fry

Followed all the directions, except left out Chinese cabbage because I couldn't find it. The sauce gives a very low yield in comparison to the vegetables required. And you'll need a huge skillet or frying pan. Mine was overflowing with veggies. All in all, it was very bland even though I had added extra minced and ground ginger, and I was disappointed since I had to buy ingredients I normally don't have.

Ratatouille Fettuccine Alfredo

This dish was very hearty! It was a bit bland though. I would add more seasoning somewhere. I used fresh pumpkin and fresh mozzarella. I couldn't taste the pumpkin at all. Perhaps more?
