Chef John's Spinach and Feta Pie

Easy and delicious ! I added sauted mushrooms. Onlt used 8 eggs cause thats all i had and it was just fine.A little more feta and sliced pepperoncini on top for a little extra zip :-) great for my low carb

Cabbage Fat-Burning Soup

This recipe was very good. I did make some changes. I used about half the celery, 1 can tomatoes, 2 onions, used spicy V-8 instead of tomato juice, added several dashes of Worcestershire,added oregano, crushed red pepper and about 1/3 cup Cholula hot sauce. It was spicy. But, I like it that way. Eating only this for a week was a little tiresome but, I did lose weight. I will make again but, not too soon. Oh, one more thing I added instead of the green beans I used a frozen bag of green beans/edamame/mushroom mixture. Very healthy! My BF who needs to gain weight loved it too.

Tater Tot Bake

Yummy ! Made this last night. My BF loved it. I added a little garlic powder to the meat/onion mix. Also, added 1 bad frozen mixed veggies (partially cooked) on top of meat. I used Sharp Cheddar Cheese. Will definitely make again. It's a great all-in-one meal.

Chili Rellenos Casserole

Very Good ! I used about 8 fresh roasted Hatch green chiles.(Hatch,NM is famous for thier peppers) Very accessable for me living in AZ. Used 1 lb of ground beef cooked with onion, and a little cumin. 3 eggs and a little hot sauce to the egg mixture. And enchilada sauce instead of tomato sauce. Used mostly sharp cheddar with a little monterey jack. Many compliments !! Reheats well.

Slow Cooker Italian Beef for Sandwiches

Being from Chicago and now living in Arizona, you can't get a true Chicago style Italian Beef, until now ! This was so good ! I added 2 packages of Good Seasons zesty Italian dressing mix and used beef broth instead of water. Cooked for 2 hours on high and 2 hours on low, sliced it on my meat slicer, returned the meat to the juices to warm the meat again and there it was, a true Chicago style Italian Beef sandwich here in Arizona!!!! Then added some Hot Giardinera to the sandwiches nad we were in heaven ! Thank you !

Roast Chicken with Rosemary

Made this last night. Delish ! So, moist and flavorful ! Used fresh rosemary inside and rubbed outside with salt, pepper, garlic powder and a little seasoning salt. Cooked on the grill in a roasting pan for 2 hours.

Charley's Slow Cooker Mexican Style Meat

Very easy and very good ! Used a 3# chuck roast and a little more hot sauce, ( I used Tapatio ) and minced garlic. Cooked for 7 hours. 3 on high and 4 on low then shredded the meat and simmered in the juice for another hour or 2. Tender and very flavorful tacos.

Baked Ziti I

Very easy and delicious ! Made a few changes. Used ricotta mixed with an egg and some parsley and oregano instead of sour cream, used a mixture of ground beef and hot Italian sausage ( about 1 1/2 lbs ). Used a bit more cheese. I forgot the onions. Would be great with mushrooms and black olives in the sauce. I used Prego Traditional and added some garlic. Makes alot!

Kosher Salt Encrusted Prime Rib Roast

The BEST Prime Rib !! Much better than any Restaurant ! So easy too ! Fantastic flavor, no need for any kind of Au Jus. If I could give 10 stars, I would. After working all Christmas Day, I came home to the best meal ever. Thank you, Holly !

Italian Beef in a Bucket

This recipe is awesome! When I make it, I use hot giardinera and do not drain oil. Also instead of whole pepperoncini, I use Vlasic hot pepper rings, drained. It turns out good and spicy ! Meat just falls apart which, is great for sandwiches ! I recently moved to AZ from Chicago and could not find giardinera so, I substituted hot banana peppers ( in a jar ) and it turned out just as good !

Spicy Tortilla Roll-Ups

I always get rave reviews when I make this . The only changes I make are instead of the green chiles, I dice up 2-3 whole pickled jalapenos and leave out the cilantro. Awesome Appitizer !

Mexican Cream Cheese Rollups

These go like "hotcakes" in my household. Everyone loves them. As we like things hot and spicy I use hot salsa and just a few minced jalapenos for a extra kick. We do serve with additional salsa.(hot, of course)

Rainbow Pasta Salad I

This is a very good recipe. My BF LOVES it as do I ! The only additions I make are adding some marinated artichoke hearts, Vlasic zesty pepper rings and diced monerey jack or provolone cheese instead of shredded and more black olives We make it alot in the summer and use it for lunches all week.
