Funnel Cakes IV

Totally most awesome and amazing. I cut the servings to six which then told me to use 1.5 eggs. Instead I used one egg and added two tablespoons of vanilla extract. I also added three tablespoons of cinnamon just for kicks. LOVED THIS!

Sauteed Sweet Plantains (Tajaditas Dulces de Platano)

My plantains were not as ripe as I had hoped, and I skipped the oil and fried them in margarine and did not add the salt. The salt in the butter offset the sweetness, but I knew that would happen. I skipped the brown sugar, as it seems to cause more problems than it was worth, so I drizzled mine with Smucker's Sugar Free Caramel Sauce - you can find it with the ice cream toppings, and it totally made the dish.

Simple Scones

Made the cranberry/orange version, aside from not being able to zest my orange on a cheese grater, this was wonderful. I managed to get about 1/4 of the orange zested with a vegetable peeler, minced the peel with a knife, and then added it to the mix. I then juiced the orange, added a couple of teaspoons of sugar to the juice, and then drizzled that over the scones. I had no idea scones were this easy. Many commercial scones are far too sweet, these were just perfect.

Easy Sugar Cookies

This was a basic "good to ramp up" type of recipe. Like others, I softened the butter, to the point that I put it in the microwave for 15 seconds. I used almond extract and doubled the amount. I then stuck with 8 minutes as others did. The one place the recipe went wrong was putting them on an ungreased cookie sheet. They stuck to the pan, big time, and the only way I was able to bake the second batch was to put a piece of waxed paper over the stuck-on bits and layering the cookies from there. Overall, just OK. Nothing special.
