About this Cook
I am a stay at home mom of three, with a very busy life. I volunteer at my children's school, in my community and support my husband with his very busy life. I have recently lost 130 lbs and am very conscious of what I eat now.
My favorite things to cook
I love to make dinner for family and friends, including the worlds easiest enchiladas, baked Ziti, oven fried chicken and a tostada or taco bar. I really enjoy finding a dish my children love and watching them help me make it.
My favorite family cooking traditions
I love having my kids help cook -and I love explaining to them where I found a recipe and how I started making it. All three of my kids are great in the kitchen! Every Christmas we make my mom's fudge (yummiest I have ever found)and some of her other cookie recipes.
My cooking triumphs
I consider any meal my guests and family enjoy a triumph!
My cooking tragedies
Once, while my now husband and I were dating, I was cooking him dinner for the first time - a specialty -linguini and clams. I got distracted by his storytelling and his dog -and overcooked the pasta to paste. HE ATE IT ANYWAY!

Norwegian Krumkake
This is an awesome recipe and delivered a very flavorful cookie. We added 3/4 tsp of Cardamom for a little more traditional flavor. We used a pizzelle maker, and they did not roll well but they tasted great!

Baked Pumpkin Bread
I loved this recipe! We doubled it and made it for muffins like one of the other reviewers recommended. I used extra pumpkin and removed the butter and used half whole wheat flour and it was wonderful! We got tons of warm comments when we gave them to neighbors as a Thanksgiving gift.
