Let me preface this review with a disclosure that I didn't actually eat the pot roast. I have been a vegetarian for 20 years, but my husband and children are a bunch of meat-eaters. They went crazy for this dish! Even my 2 year-old couldn't get enough of it. And I wasn't completely grossed-out making this recipe because I didn't have to do much handling of or cutting the meat, which says a lot. Searing the meat made a mess of my open-burner stove, but I might have used too much oil, as it splattered all over. Next time I make this, I will leave enough time to completely clean my stove afterward. Thanks, Chef John, for making me a superstar in the kitchen!
