Banana Bread

Great recipe - took some other reviewers advice and added cinnamon and baking powder and vanilla (tsp of each). Also used applesauce in place of the butter (one snack sized cup) and 3/4 cup brown sugar instead of white. Baked for 55 minutes in 1 9 inch loaf pan. Came out moist and delicious.

Quick Quiche

Used 5 eggs, so I added a little extra milk and flour. Sauteed the onions in the bacon pan in just a tiny bit of butter (only because I used turkey bacon so there was no grease in the pan). Super easy (even easier if you use pre-cooked bacon or chopped ham). I thought it could use a bit more flavor, although I used cheddar cheese since my kids don't like swiss - the swiss would help, I think. Great weeknight, low-carb meal.

Easy Pepperoni Pizza Muffins

This was a fun and easy meal for the kids. However, it was very heavy on the bread. Next time, I would split the muffins in half. That way you make 20 and it tastes more pizza-y and less biscuit-y.

Super Simple Salmon

Super easy and very good! Whole family enjoyed it. I put basil, kosher salt and a 1/2 tsp. of lemon pepper on a plate and mixed. Pressed both sides of fish into mixture and placed in hot skillet with butter and a half teaspoon of minced garlic. Cooked 5 minutes, then flipped and added a tsp of lemon juice to the top of each filet. Served with rice and broccoli.

Baby BLT

Got good reviews at a party. Here are my changes...used 1/4 cup mayo, 1/4 cup chive cream cheese, subbed turkey bacon (which I chopped in food processor), and most importantly, cut the tomatoes length-wise, scooped out each half and filled both. Much easier to scoop that way. Garnished with extra green onions and chopped bacon. Would look even better on a bed of lettuce!

Slow Cooker Chicken Stroganoff

Every time I try to cook with canned soups, I am disappointed. This didn't taste at all like stroganoff to me. The only change I made was to do half sour cream and half cream cheese. Thought it was very bland. Won't make again.

Creamy Au Gratin Potatoes

Easy and delicious. I also chopped the onion and mixed it in. Also added some diced ham and made it a meal. Baked for 55 minutes covered and 15 minutes uncovered.

Cheesy Scalloped Potatoes with Ham

Easy and good comfort food on a cold night! I was rushed for time, so I sliced the potatoes and threw them in the microwave for about 10 minutes while preparing the rest of the ingredients and sauce. Also put the onions in with the sauce to make sure they were tender. Baked at 400 for 45 minutes and potatoes were perfect. Also added a little leftover crumbled bacon to the top before baking - yummy. Sprinkled a little cheddar on top before serving.

Rosemary Ranch Chicken Kabobs

Used 4 large chicken breasts, pounded. Subbed thyme for the rosemary and skipped the sugar. Marinated in fridge for 6 hours. Delicious and tender. We all loved it and the neighbors even commented on how good it smelled!

Oven Fried Chicken III

Yum! I pounded chicken breasts flat and then sliced into tenders, (about 3-4 per breast). I did dilute the mayo with milk. Used Panko bread crumbs with onion powder, Old Bay, seasoned salt and garlic and paprika. Cooked on cookie sheet in 400 over for 20 minutes, then flipped with tongs and baked another 20 minutes. Served with mashed potatoes and gravy and it was like we were at KFC!

Oven-Fried Pork Chops

I ground my stuffing mix to make it stick better, I also pounded my chops to tenderize. Very easy and tasty recipe. Took about 22 minutes to bake.

Chicken with Bouillon

I used canola oil instead of butter, and used 1 tbsp. of bouillon since I was only doing 3 chicken breasts. Still pretty salt (but I like salty), but it was easy and full of flavor.

Crispy Chicken Parmesan

Easy Tuna Casserole

Quick and easy and good. I did add 1 chopped onion sauteed in 1 tbsp. butter, an additional can of tuna and a soup can full of milk. Used one box of elbows. Skipped the FF onions b/c I didn't have them; sprinkled extra cheese on top before baking. May be a little dry without extra soup or milk, but deserves 5 stars for the ease and adjustability.

Cheesy Potato Salad

Very good and easy! I too skipped the sugar. Used regular russet potatoes (about 5) b/c that is what I had on hand and regular onion because I was out of chives. Also used left-over turkey bacon. Will make again - thanks!

Julia's Easy Slow Cooker Chicken

Super easy. I threw 4 frozen chicken breasts in the crockpot with quartered potatoes, a can of chicken gravy, a half can of water mixed with the onion soup mix and turned it to med-high for 5 hours. When it was almost ready, it still seemed soupy, so I added some flour mixed with water to thicken it up. Smelled and tasted delicious.

Gary's Turkey Burritos

These were really good and easy to make. I never heard of hot tomato sauce, so I used 1 can of regular sauce and then filled the can with salsa and added that. I used frozen corn b/c that is what I had. I wrapped the burritos and baked them with a little cheese on the inside and more sprinkled on top. Served with sour cream and hot sauce on the side. Also used whole wheat tortillas. Loved them and will make again for sure!
