Penne Rosa with Parmesan Crusted Chicken

I made this recipe last night, and used the adjustment to feed four people. Our family (including two teens) LOVED it!! Rave reviews from my hubby too. I followed the recipe as it is, and it was delicious. Will definitely be making again...soon!!

Roasted Brussels Sprouts with Apples, Golden Raisins, and Walnuts

This was a very easy and healthy dish that pairs well with most anything or can be enjoyed on it's own! After reading the reviews I added some balsamic vinegar to my olive oil mixture. I also added cranberries but still used golden raisins as well. Some feta was also tossed in at the end with the cranberries and raisins. So delicious and would be great to serve at the holidays too!! Hubby does not typically like Brussels but gobbled this dish up :)

Chicken Ranch Dijon

Tasty and fast! Made this on a weeknight when there is always less time to cook, and with just a few ingredients this tastes like you have spent hours in the kitchen! I used Marzetti Simply Dressed ranch which was light and delicious. We like the tangy taste of Dijon, but could see reducing if you do not like that flavor to be as strong. I cooked rice noodles instead of pasta, and they really soak up the sauce which was great. Will definitely make this again!

Chinese Chicken Wings

This recipe is soooo good! Very simple and delicious! Made minor changes but for me the changes were important because I do not like my food too salty. When I prepare Chinese dishes that call for soy, I cut back on the soy a little bit and add white wine and it always turns out fantastic. For this recipe , I used 1 1/2 cups of the soy and 1/2 cup of white wine. Per other suggestions on this site I added 2t of Worcestershire sauce and 1t red pepper flakes. The wings were out of this world delicious and practically fell of the bone as we ate them! Will definitely be making these again!
