I've been married since 2007 to a wonderful husband. I do not have any children of my own (by choice) and enjoy spending my time gardening, vacationing, working out and cooking. I've been cooking since I was 12 and it's always been one of my favorite things in life!

Pineapple-Infused Vodka
Lovely and simple recipe if you plan ahead (10 days). This is similar (if not the same) drink they call VIP at Del Frisco's and the Stoli Doli at Capital Grille.

Cabbage Roll Casserole
Like another reviewer, I made this on the stove. I added a can of diced tomatoes with green chilies instead of the tomato sauce and used cooked brown rice I had leftover from the other night. The brown rice stayed whole (didn't get mushy like white rice tends to get when over cooked) and the cabbage didn't over cook while waiting for the rice to cook). Healthy, fast and delicious!

Meatball Nirvana
These meatballs were easy to make. I would suggest greasing your baking pan first. Mine stuck to the pan badly, despite using a non-stick pan! I would also recommend using onion powder or onion flakes vs fresh, chopped onion, as the onions still had a lot of crunch and bite to them. I don't mind it, but my hubby doesn't like crunchy onion texture. Next time, I'll only make these two adjustments.
