Have made many times & changed it up lots of ways. Change out salami for mushrms, spinach, ham. Have also added some ricotta at times. Easy & good for grab and go

Cheesy Scalloped Potatoes with Ham

Reviewed: May 18, 2014
Delicous! even more traditional: Skip the peas- use 3 c. ham, 1 whole onion. Skip the paprika on top- use 2 tbsp. breadcrumbs w 1 tbsp. butter and 1/8 tsp. parsley. Make sure you have 3 qt. dish to bake in, its Very Big. 1st day serving is the best, little dry the 2nd day, but still really good.

Slow-Cooker Corned Beef and Cabbage

Reviewed: May 18, 2014
Best slow cooker corned beef recipe ever. Took others suggestions & used beef broth instead of water. Threw in extra onion, 2 bay leaves,3 cl. garlic,1/2 tsp dry mustard, few peppercorns along w. spice pkt. Cooked on HIGH for 7 hours- don't be scared, it works. Veggies for last 3 hours (added 2 cut-up turnips for St Paddy's). Cabbage for last 1 1/2 hours. Meat was tender & veggies not mushy .

Sam's Famous Carrot Cake

Reviewed: May 18, 2014
A+ !! Made into cupcakes and took to Easter dinner party. Big hit. The pineapple and coconut gave it moisture with just enough sweetness. Toughest part was shredding those carrots! Frosted with cream cheese frosting....mmmmmm

Looks easy... but was tricky. Had to thin-it-out alot in order to spread it so it did not dry shiny. was tough to work with. had to paint cookies with a brush. took longg time to dry.

Raspberry and Almond Shortbread Thumbprints

Reviewed: May 18, 2014
Made these to round-out Christmas cookie tray. Very tasty, but a little more difficult to make- i am a novice so can use more practice. Like others recommended, used top of chapstick to make jelly holes- worked well- smaller/deeper wells were better than the ones i used my thumb with. Also, if i overstuffed the cookie with jam or made wide holes, the cookies cracked & separated. Will drizzle glaze over cooler cookies next time to keep from disappearing

Rum or Bourbon Balls

Reviewed: May 18, 2014
Made to specs in recipe- very good! Couple of recommendations 1.) Use the best quality rum you can afford (it pairs nicely with chocolate and gives vavoom) 2.) Let them sit & simmer at least a few days before serving (perfection takes time).

It's Chili by George!!

Reviewed: May 18, 2014
Delicious! Being a chili lover I changed it up a bit. Used 1.25 lbs ground beef w/ .67 lbs italian sweet sausage. added 1 can 28 oz diced tomatoes, 1/2 c. celery & 2 cloves garlic (because i had in fridge) and didn't have tomato juice so substituted another 24 oz sauce instead & 1/2 jar leftover salsa (from fridge). Was a little spicy for the ppl who don't do hot stuff (i admit the amount of chili powder looked like a lot); but still rich, hearty, thick and very good. Definitely better the 2nd day.

Garlic Roasted Chicken and Potatoes

Reviewed: May 18, 2014
In fairness to the creator, I admit I cooked in the crockpot. I thought the flavor was a bit bland or lacking something ...maybe thyme, rosemary, onions or another herb would dress-it-up...either way, i will try again in the oven next time.
