I almost only made 1 onion, so glad I made 2, or I would have had to fight my husband for it. They were so good! My husband put some provolone cheese on his when it was done, delicious!!

Classic Macaroni Salad

This was great, I left out the vegetables (I don't like crunchy stuff in my mac salad) and used half the sugar. I will definitely be making this again!!

Artichoke Chicken

This recipe has made it in to the weekly rotation because it's so fast, easy, and delicious. I make it low fat with FF sour cream, LF mayo, and alittle less parm than called for. Thinking about adding spinach to the mixture next time.

Baked Chicken with Peaches

Stuffed Chicken Breasts

I did not use the soup, I made regular chicken gravy instead. I added craisens to the stuffing, so good! Almost didn't want to stuff the chicken with it and just eat it as-is.

Baked Dijon Salmon

I can't speak for myself b/c I don't eat fish, but I have made this for my husband several times and he just goes crazy for it. I use walnuts instead of pecans. This is so easy and fast to make.

Sweet and Sour Chicken II

When I tasted the sauce when it was cooking I thought it would be way too strong, but once it was mixed with the chicken, veggies, and rice it was perfect. I coated the chicken in flour and also added broccoli. I will be making this again for sure.

I love this recipe. I usually add a pound of lean ground beef and 1 package of frozen spinach. I also use beef broth instead of the water. I could eat this everyday!

Simple Chicken Slop

This is the definition of comfort food. I used 2 cans of 98% fat free cream of chicken soup and reduced fat cheddar cheese. I also added an onion, a can of black beans, and frozen corn. Very good, will definitely make this again.

Glazed Meatloaf I

Although this isn't your traditional meatloaf, it's great. Makes a normally plain meatloaf very flavorful. I served this with garlic mashed potatos. I Will definately make this again.
