Special Rhubarb Cake

Reviewed: Jul. 12, 2009
I think my husband just ate half this cake in a sitting! It's SO good! I didn't have 4 cups of rhubarb so I used 2 cups rhubarb and 2 cups strawberries. I added 1tsp of vanilla to the cake batter and I used brown sugar for the crumble and added a little cinnamon - other than that, I wouldn't change a thing!

Slow Cooker Homemade Beans

Reviewed: Jul. 1, 2009
I really liked this recipe. I was looking for a real homemade beans recipe (I see so many recipes that call for you to open a few cans and add this and that - that is NOT homemade!) so that I would know exactly what is going in to it. I did soak and boil the beans as others suggested and they were perfect - not too hard not too mushy! I left out the bacon (will try it with next time) and added lots of pepper, 1/2 tbsp of worcestershire and a 1/2 tsp of cayenne. Next time I will use less brown sugar, but other than that, this recipe is great!

Halibut Supreme

Reviewed: Jun. 29, 2009
I liked this dish, however, next time I make it, I am going to make a few changes -- mostly, I think the sour cream and mayo combo is a little too tangy. Next time I'll just make a white sauce with flour, butter and milk, then add the same seasonings, lemon and cheddar and I think that will suit my family's taste much better. Thanks for the idea!

Pan Seared Lemon Tilapia with Parmesan Pasta

Reviewed: Jun. 25, 2009
I really liked the flavour of this fish - it was light and refreshing. I did 1 tsp of each spice (except cilantro cause I didn't have any - and salt and pepper of course I just added to my liking) - a pinch didn't seem like enough. The pasta was pretty good - I think next time I will add some red pepper flakes for some heat, a little more lemon and some of the pasta water so it's not as dry. I will make this again with a few changes for sure!

Slow Cooker Carnitas

Reviewed: May 22, 2009
This pork was amazing! I put everything in my slow cooker, then shred the pork and served it in pitas with a garlic sauce (1/3 cup mayonnaise, 2 tablespoons milk, 2 cloves garlic, finely chopped), topped with tomatoes and lettuce - my husband went back for thirds and asked if there was any leftover for his lunch the next day! this has become a regular in our meal rotation!

Chicken Enchiladas II

Reviewed: May 10, 2009
I just made this for the second time and with a few extra spices I'm giving it 5 stars! All I did was add a 1/4 tsp of chipotle chile powder and a 1/2 tsp of cumin to the chicken mixture. then I sprinkled some chili powder on top of the cheese - the first time I made is as the recipe is listed, my husband thought it was ok....this time he went back for seconds (that means he really liked it!)!!

Creamy White Wine Sauce

Reviewed: Apr. 16, 2009
I was a little weary of the flour in this recipe, but decided to give it a shot. The sauce was ok, but I found the consistency to be a little gummy - which I blame on the flour. I will try this again, but with a little less wine and a couple dabs of butter so the sauce is creamy, but not gooey. Good place to start.

Peanut Butter Marshmallow Squares

Reviewed: Apr. 11, 2009
This is exactly the recipe I was looking for! Only downfall was the squares were hard to get out of the pan even though I buttered it! Worth the sticky mess though without a doubt!

Chocolate Cake II

Reviewed: Apr. 11, 2009
This cake was wonderful! I made it for my 2 year old's birthday (substituted hot water for hot coffee) and it was still great. I've also made it since with the coffee and that just gives it a richer and deeper flavor. So much better than out of a box, this will be my standby for chocolate cake! (Update: made this again for my son's 4th birthday cake and it got rave reviews. so moist and so flavourful and SO easy!!)

Smoked Paprika Goulash for the Slow Cooker

Reviewed: Apr. 11, 2009
I'm only giving this 3 stars just because we didn't absolutely love the flavour. The meat was utterly tender, so that was great. I guess I don't like paprika enough to love this recipe, but I will use it again and change up the spices a bit.

Gnocchi with Sage-Butter Sauce

Reviewed: Apr. 11, 2009
I liked this and so did my 2 year old, but my hubby didn't - I think it might have been too much sage. I think it's a good base for any sort of butter sauce to use on gnocchi, and I will definitely try it again with different herbs and spices! On the plus side, dinner was ready before the table was set - took me under 10 minutes and that is a bonus!

Slow Cooker Marmalade Curry Chicken

Reviewed: Mar. 31, 2009
My 2 year old and I enjoyed this chicken, but my husband thought it was too sweet. I even made sure to buy unsweetened marmalade. If you don't have a sweet tooth, you might find this recipe too sweet. Give it a try though it's easy and the chicken will be super tender and flavourful!

Honey Lime Chicken Wings

Reviewed: Mar. 21, 2009
these wings were amazing! my husband even said they were better than any wings he'd ever had in a restaurant, and I agree!! only thing I'll do differently next time is add a little more red pepper flakes for more spice. other than that, this recipe is perfect!

Easy Indian Butter Chicken

Reviewed: Jan. 30, 2009
I tried the low fat version of this recipe. It is a good start, but I will make a few changes next time I try it - I do prefer a sweet and spicy butter chicken, so I would cut out the salt and add a couple tsp of sugar. Also, I halved the recipe, but used 1tbsp of garam masala - it's what adds all the warm yummy flavour so you should use lots! And definitely do it all in one saucepan to keep it simple!

Traditional French Canadian Tourtiere

Reviewed: Dec. 27, 2008
This was delish! I left out the cinnamon and added more allspice, and I also added some mashed potato (that I added some beef broth and a touch of allspice to) just to make sure the pie was extra moist. I got rave reviews (and ate half the pie myself!). I will be making this pie again and again!!

Merlot-Peppercorn Steak Sauce

Reviewed: Sep. 27, 2008
My husband and I loved this sauce. We did it without mushrooms cause he doesn't like them, and it still was delicious. I did increase to 1 cup of wine and only 1 tablespoon of worcestershire - that was just personal taste. Great base recipe that you can do a lot to.

Banana Oatmeal Cookies I

Reviewed: Sep. 27, 2008
I've been trying to find a banana cookie recipe to use up ripe bananas, and finally this is it! This cookie is nice and chewy and has a lovely warm flavour from the cinnamon and cloves. Next time I'll try it with raisins. Other than that I wouldn't change a thing. Thanks for sharing.

Slow-Cooker Barbecue Ribs

Reviewed: Oct. 18, 2007
My boyfriend doesn't get home for a couple more hours for dinner, but I couldn't resist trying these ribs now...they are amazing!!! Literally falling off the bone tender! I did use my favourite rib sauce instead of ketchup and left out the oregano (cause I don't really like oregano) and they are the best. Now that bbq season is over and snow is on the way, this is how I will cook my ribs all winter long!
