About this Cook
I'm a 32 year old mom of a 5 year old boy named Echo and his sister, 10 month old Trinity. I've been married to my husband, Gord, for almost 4 years. I used to watch cooking shows before they became popular - the one I remember most was called "Cooking with Biba" - she was a cute little Italian woman. I remember when the Food Network came out, I thought they designed the channel just for me! I almost went to culinary school when I was 22, but chickened out. I love all aspects of food - eating, cooking, reading recipes. I definitely consider myself a foodie.
My favorite things to cook
Mexican is my favourite kind of cuisine to cook. I like the idea of making things from scratch or "homemade" from whipped cream, to hummus, cakes to perogies! Every day I become more adventurous and try more difficult recipes.
My favorite family cooking traditions
I bake a special cake for my son every year on his birthday. I love to make homemade stuffing or dressing with a turkey (I grew up eating the boxed stuff!). We are a new family, so I'm just starting traditions. I look forward to when my children are big enough to help me with our favourite dishes!
My cooking triumphs
perogies from scratch; homemade gnocchi; my first turkey; my son's lego birthday cake; roasted duck; homemade pizza; Indian spiced chicken wings (my own recipe!); beef vindaloo with homemade naan bread
My cooking tragedies
I try to pick recipes that I know I'll be able to handle, so I haven't had any major tragedies yet! I do remember a green chili sauce I made once for echiladas that went straight into the garbage! oh, and burnt cinnamon buns!! at least they were made from scratch! haha, funny to read this - I tried gnocchi again a little while ago and they were awful! oh well, try and try again!

Indian Naan II
I've tried a few recipes for naan and this one is my favorite (next to the real thing made in our favorite Indian restaurant!). The yogurt gives it a nice tang and great texture. I make the dough in my bread machine, then grill it as the recipe says. yum yum!

Classic Dinner Rolls
so easy and turned out perfect. I ran the dough cycle in my bread machine, divided them into 12, then put them into an 8 x 10 casserole dish and let them rise again. store bought no more!!

Portuguese Muffins - Bolo Levedo
I used to get these years ago at a little cafe in Burlington, Ontario, where I'm from. I am so glad I found this recipe because now I can have them any time I want. I kneaded the dough in my stand mixer for 10 minutes, then let it rise in a warm oven. I did first pan fry them in butter to get that dark golden brown crust, then I baked them in the oven for 10 minutes just to make sure the center was baked through. omg, beyond delicious!!!!!
