Broiled Tilapia Parmesan

This recipe was delicious. I used light mayo and bottled lemon juice rather than fresh. This was super easy to make, healthy, and tasty.

I tried to lighten up this recipe by using turkey bacon, reduced fat sharp cheddar and mozzarella. I added tomatoes and used green onion instead of regular. It was ok, but nothing special. It would probably have been better with regular bacon.

Stuffed Jalapenos with Smoked Gouda and Pineapple

I cut the tops off the jalapeños and halved them. I roasted them for 20 minutes while making the filling. For the filling, I left out the bacon and used fat free cream cheese. I also added some pickled diced jalapeno for a little extra kick to the sweetness. After the peppers roasted for 20 minutes, I filled them and baked them for another 20 minutes. These were delicious. Takes time but a great appetizer!

Slow Cooker Chicken and Dumplings

First I cut the recipe in half. I covered the chicken with chicken broth rather than water. I also seasoned the chicken breasts with salt, pepper, cajun seasoning, onion powder, and garlic powder. I used Pilsbury Honey Butter biscuits that I added for the last hour. This was simple and delicious. Reminded me of my grandmother's dumplings!

Cajun Style Baked Sweet Potato

I didn't have any rosemary, and these still tasted great. This is a great change from your usual sweet potato recipes that use lots of butter and sugar. This recipe has a little kick to it, giving it a unique, delicious flavor

Authentic Louisiana Red Beans and Rice

Excellent, authentic Louisiana flavor. I left out the sage because I'm not a fan of it. I added a little cumin, seasoned salt, pepper, and worcestershire for extra flavor. Also I just used a smoked pork and beef sausage because the store didn't have andouille. It was delicious, and I will definitely be making it again.

Alabama Fire Crackers

These were really spicy, so keep a glass of water or milk nearby when eating. I loved the flavors though. I used multigrain club crackers, and these were a great snack!
