Alabama Fire Crackers

These were really spicy, so keep a glass of water or milk nearby when eating. I loved the flavors though. I used multigrain club crackers, and these were a great snack!

Authentic Louisiana Red Beans and Rice

Excellent, authentic Louisiana flavor. I left out the sage because I'm not a fan of it. I added a little cumin, seasoned salt, pepper, and worcestershire for extra flavor. Also I just used a smoked pork and beef sausage because the store didn't have andouille. It was delicious, and I will definitely be making it again.

Cajun Style Baked Sweet Potato

I didn't have any rosemary, and these still tasted great. This is a great change from your usual sweet potato recipes that use lots of butter and sugar. This recipe has a little kick to it, giving it a unique, delicious flavor

Slow Cooker Chicken and Dumplings

First I cut the recipe in half. I covered the chicken with chicken broth rather than water. I also seasoned the chicken breasts with salt, pepper, cajun seasoning, onion powder, and garlic powder. I used Pilsbury Honey Butter biscuits that I added for the last hour. This was simple and delicious. Reminded me of my grandmother's dumplings!

Stuffed Jalapenos with Smoked Gouda and Pineapple

I cut the tops off the jalapeƱos and halved them. I roasted them for 20 minutes while making the filling. For the filling, I left out the bacon and used fat free cream cheese. I also added some pickled diced jalapeno for a little extra kick to the sweetness. After the peppers roasted for 20 minutes, I filled them and baked them for another 20 minutes. These were delicious. Takes time but a great appetizer!

Quick Quiche

I tried to lighten up this recipe by using turkey bacon, reduced fat sharp cheddar and mozzarella. I added tomatoes and used green onion instead of regular. It was ok, but nothing special. It would probably have been better with regular bacon.

Broiled Tilapia Parmesan
