Savory Chicken Brine

The chicken was juicy, yes. But there was no discernable flavor imparted by the brine. Full disclosure: I forgot to add the seasoned salt. But if that's the only thing that added flavor, then I'd rather use a different recipe.

Tomatillo Salsa Verde

Just wanted to put it out there that changing the water to vinegar, or adding vinegar, is not necessarily a good means of converting this recipe to make it safe for canning. To safely can salsa, use a recipe meant for canning or follow pH guidelines for canning and buy your own pH meter. Otherwise, the pH might not be low enough to make it safe. Also, tomatillos are not tomatoes, so one cannot presume to convert a canning recipe for tomato salsa to one for tomatillo salsa just by substituting one fruit for the other. The pH might not be the same.

Pumpkin Waffles with Apple Cider Syrup

I definitely agree that the fabulously intense apple and cinnamon flavor will overwhelm the pumpkin waffles--and they are still freaking awesome!!! I actually had a less-than-my-favorite jug of apple cider, so I boiled it down by about a third to give it more oomph. Worked great. Might try 3/4tsp of cinnamon next time (and I'm a cinnamon junkie). I also want to say about the idea of the syrup overwhelming the pumpkin flavor--how much are we ever really tasting the pumpkin flavor of pumpkin breads anyway over the cinnamon, cloves, and ginger? Do you ever really find yourself saying "what a great squash flavor in that bread"?
