Nacho Chip Casserole

Family thought it was okay. Don't think it is something they will ask for. It was okay to me, think I put too many chips and not enough cheese.

Snicky Snackies

Made this for the first time at our church's women's Christmas gathering. It was the hit of all the dishes. I had to go to the church office and print the recipe from the site. Made it a couple more times and everyone loved it.

Fluffy Pudding Frosting

Needed a quick recipe for cake/icing for children's church since I forgot to get cupcakes. The kids loved this icing. Some of them just ate the icing and left the cake.

Boiled Peanuts

I grew up a pnut farmer's daughter. I love them. I found a pressure cooker is GREAT for boiling peanuts. It only takes about 15 minutes of "jiggling" time. Then let it cool "without" water. this lets the salt get in the peanuts. I have just been cooking them this way a couple years and will never wait the 3 hours again. I use the salt ratio in this recipe and it works well. Remember the longer you let them sit in the salty water, the saltier they will become.

Brown Sugar Banana Nut Bread II

I followed others advice and used 2 1/2 cups flour and added 1/4 tsp cin and nutmeg but it was still bland to me. Not sweet enough for me either. Could be good with a little more sweet and flavor.

Blackberry Cobbler

Taste gooood. I don't like seeds in my cobbler, so I cooked down the blackberries and strained the juice. I didn't use the cast iron either. Itried to drop the dough in my regular saucepan to then later transfer to casserole dish. Quickly decided to go ahead and pour the liquid in the casserole and then drop the dough into it. Also, I used a little of the berry juice with water in the dough so it has some berry taste and a purple color.
