Zucchini and Onion Pancake

I liked this a lot. I modified significantly. In addition to the 2 eggs, I added basil, marjoram, sea salt, pepper, paprika, four cloves of garlic in the processor with the onions and half a cup of corn meal. Draining in a colander for thirty minutes was very helpful, thanks to the reviewer who suggested it.

Blackened Tuna

Loaded Queso Fundido

Very, very tasty! I will add to my rotation. Used almond milk instead of coconut, all else was the same. Very tasty! It was creamy as well.

Lemon Garlic Tilapia

Made this today. Stuck pretty close to directions, but took a suggestion and sautéed garlic. It was a bit bland for me. Very light and went well with a spinach and mushroom salad.

Shrimp and Crab Bisque

Liked this a lot. I live in Abu Dhabi and used canned crab. It worked very well. I would suggest skipping the salt, for sure. I also would suggest using Chardonnay instead of Sauvignon Blanc as the wine. Great recipe.

Black Bean and Couscous Salad

I liked it and will probably make it again. I modified. I did not have red wine vinegar. I used 2 tsp Shiraz and 2 tsp balsamic vinegar. The salad lacked oomph, but was tasty. Will try again with more modifications. Note: I did take advice of previous posters and doubled olive oil, cumin, lime juice.

Brown Sugar Pound Cake I

This cake was a hit at my roommate's Bday party. I modified it significantly. I added 1/4 cup Hennessy and substituted almond milk for the cow milk. The cake was super moist, super delicious and the brown sugar glaze (brown sugar, butter melted together with 2 tblsp cream and 1/4 tsp salt added) with almond slivers made it lovely. Also, it was very tall. Very. Make sure your bunt pan is large enough.

Salmon with Brown Sugar Glaze

Great recipe! I added soy sauce and used cayenne pepper as well as paprika to season the fish. I also added two tablespoons of honey. It was spicy and sweet! Yum.

Shrimp and Asparagus Fettuccine

Loved it! I modified quite a bit. I added Dijon mustard to the shrimp. After the mustard, I added the seasonings I had on hand, sea salt, powdered black pepper, cayenne pepper, paprika, bay leaf, applewood seasoning, and cinnamon. I allowed shrimp to sit while I cooked asparagus. Threw in a quarter cup of dry white wine right at the end after shrimp and asparagus had cooked together. I boiled the pasta in vegetable broth and garlic. Mixed in shredded Parmesan cheese just before I added the shrimp and asparagus to pasta. My roommates and I loved it. I did not find it to be bland at all.

My Chili

This was great! My roommates liked it as much as I did. I had to stew my own tomatoes, but otherwise, I stuck to the recipe. I did add a bit of black pepper for bite. I baked homemade cornbread to complement the chili. Yum!

Delicious Ham and Potato Soup

It is very tasty. It took me more like 75 minutes. Perhaps I prep slowly, I don't use a lot of gadgets. I substituted turkey deli meat and it was awesome. I also used carrots instead of celery, could not find any that looked really fresh. This website is really developing my kitchen skills. Next time, I may try this with clams.

Insane Oven Beef Ribs

The sauce was delicious, the three stars are for the sauce. It needed way more time in the oven to become tender, as ribs should. Next time, I will bake with a foil seal at a lower heat for longer. That should solve the problem. I'm going to try this sauce with chicken. Note: per calculations with My Fitness Pal, this is a very high calorie recipie best saved for cheat day.

Chef John's Salmon

Very simple to follow, used sweet basil because I could not find any tarragon in my local market. I liked the results and so did my roommates. We live in the Western region of Abu Dhabi, in spite of our desert location, the fresh veggie and fruit market is well stocked. Next, will try this with a local fish, hommour.
