Creme Fraiche Chicken

Reviewed: Jan. 27, 2004
Very good! I recently moved to France, where Creme Fraiche is readily available and cheap. I was looking for new ways to use it and this recipe turned out to be a winner! I added a touch more wine, and it was delicious.

Italian Meatball Sandwich Casserole

Reviewed: Jan. 30, 2004
I halved this recipe and it turned out fine. I substituted yellow onion for green onions. I also took others advice and toasted the bread (used plain old white bread) and then tossed it with the cream cheese mixture and really packed it down into an 8x8 pan. Also omitted the water. No soggy bottom for me! Husband loved it and he even ate the leftovers!

Veal Forestiere

Reviewed: Feb. 4, 2004
Breading on veal turned to mush as soon as it went back into pan. I didn't feel that the artichokes went well with the flavours of the wine and mushrooms. Okay, but won't make again.

Brown Sugar Meatloaf

Reviewed: Feb. 6, 2004
This was better than any meatloaf I've ever had! I used dry onion soup mix instead of onions and it was fabulous. Very moist and holds together well. This is a new family favorite. Can't wait to leave my mother-in-law speechless with this one!

Camembert Chicken

Reviewed: Feb. 6, 2004
The flour/butter base of this sauce made it taste too much like a basic gravy. Next time I will try using cream and reducing it down. The Camembert and mustard was a good combo, but covered up by the 'gravy' taste. Husband said it reminded him of biscuits and gravy.

Chicken Cordon Bleu II

Whoa. Sooo simple, but sooooooo good. I tried this out tonight and will definitely be serving it for a dinner party this weekend. Remarkable.

White Chocolate Raspberry Cheesecake

Reviewed: Mar. 24, 2004
So, so good! I accidentaly purchased white chocolate with coconut in it and it was still wonderful. Great cheesecake for company.

Cream Cheese Coffee Cake II

Reviewed: Apr. 6, 2004
I made 12 jumbo muffins out of this recipe instead of one cake. Turned out soooo moist and flavorful. The pocket of cream cheese is a nice suprise. I also added 2 bananas and extra cinnamon to the batter.

Angel Hair with Feta and Sun-Dried Tomatoes

Reviewed: Apr. 6, 2004
I used the oil from the jar of tomatoes and sauteed the garlic and some mushrooms. I'm not one for pasta with no sauce, but this was excellent. Great combo of flavors. Used basil instead of cilantro.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Apr. 7, 2004
I used a 6# bird and roasted for 4 hours. Was juicy, but not rotisserie style. Seasoning is same as Emeril's Essence (plus oregano) if you have it. Good method, just not what I expected.

Sweet Dinner Rolls

Reviewed: Apr. 11, 2004
Came out a bit too chewy. I don't have a bread machine, so maybe I over mixed by hand. Very good flavor though.

Tiramisu Cheesecake

Reviewed: Apr. 11, 2004
Good flavors. Make sure you don't overmix the batter...I did and it was too dense, more like a cake. Still was a great dessert.

Beef Stroganoff III

Reviewed: Apr. 14, 2004
I used red wine as I thought it went better with the beef. I added it after browning the beef and let it cook off. Everything else I followed exactly and this dish turned out really good! Nice consistency sauce.

Sweet and Sour Chicken II

Reviewed: May 23, 2004
I cut back the vinegar to 1/4 cup the second time and the sauce was much better. I used pork for this and it was good. Added some broccoli as well.

Chantal's New York Cheesecake

Reviewed: Jul. 8, 2004
I have tried almost every speciality cheesecake recipe out there, but this is the best. Sometimes less IS more! I used a round of parchement paper and greased the sides really well...this, and having room temp ingredients, produced a crack-free cake. Served with cherry topping. Thanks for sharing such a winner.

Crab Dip

Reviewed: Sep. 17, 2004
This is good. I sauteed the onion with some real garlic, crab and lemon to get rid of the "raw" onion/garlic taste. Added some Old Bay, but be careful you don't overkill with it. Will make again, but maybe tweek it some more.

Sweet Potato Bread II

Reviewed: Oct. 5, 2004
I cut back on the sugar by a cup and substituted applesauce for the oil. I made into muffins, hoping to sneak some nutrition in my toddler. It worked! She loves them and I feel better knowing she's getting something somewhat nutritious.

Pumpkin Roll-Out Cookies

Reviewed: Oct. 31, 2004
I am sorry to say...but I have to concur with the others. This cookie DOES taste like pie crust. I even tweeked the spices and added more sugar. Difficult to roll out and weird texture. I iced with a brown sugar glaze and they still weren't edible. Won't be making this again:(

Sunday Dinner Rolls

Reviewed: Nov. 20, 2004
When it comes to homemade dough, I am known for disasters. This is the first dough that actually did what it was supposed to! Yes, it is sticky, but be liberal with the flour when handling/rolling. It took a few tries to perfect the crescent shape, but they turned out great! I brushed with melted butter prior to baking. These rolls are not too sweet, but just enough! Thanks for sharing, these are a keeper.
