Tangy Slow Cooker Pork Roast

This is a winner! As I was assembling this, I was a bit wary of the ingredients, but it tasted great. I used brown sugar and apple cider vinegar as that was what I had. Also added 6 cloves of minced garlic. I fork pulled the pork and let it simmer for an hour. Served over buttered noodles one night and on sandwiches the next.

Key Lime Pie I

Very nice recipe. I thought the taste was just right. I wish it was a bit thicker though - maybe I will add more filling next time. I made it in a springform pan and that helped with getting the pie out. I always detroy pies when they are in the traditional pan. I enjoyed it frozen and just chilled in the fridge as well.

Pork Chops Stuffed with Smoked Gouda and Bacon

Great combo of flavors. My chops were too thin, so I pounded them out and rolled the mixture - then breaded with egg and bread crumbs. Same concept, just assembled differently! I like the thyme addition as well.

Crepes

Awesome! Very authentic. I had a hard time finding the right pan. Stainless steel scalded, my non-stick was too non-stick, so I used my flat griddle with a mold to keep it from running off. I will be investing in a crepe pan soon! This is going to be our new Christmas morning tradition.

Cheesy Onion Roll-Ups

I made a few changes, so my review is biased. After reading it was bland, I decided to add half a jar of picante sauce to the mix. That, combined with the jalapenos really, really spiced it up! I thought they were spicy, but everyone else loved them this way. I did tomato and spinach tortillas to make a Holiday appetizer. I'll make them again with the picante alteration.

Kielbasa Pasta Casserole

Cinnamon Hazelnut Biscotti

A great recipe and great base as well. I am going to try a batch of these with cranberries and orange zest as well. Drizzled with hazlenut chocolate when cool. Very easy and taste professional. Dough was super-easy to handle as well.

Chocolate Mint Cookies I

These are amazing! Like thin mints, but better. I used Andes chips for the "frosting" and when that was semi-set I sprinkled the Andes red/white peppermint crunch pieces on top. What a keeper! Used Ghardelli chips for the cookie itself.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

This was phenomenal and easy to do. The flavor is not too strong and it compliments the steak so well. I made my own "panko" crumbs by just running some white bread through the grater on the food processor and drying in the oven for a few minutes. Much better than the crispy, canned kind.

Denise's Peanut Chicken

I followed others advice and added a couple TBS of peanut butter to the soy mixture. I added cashews at the end and some red pepper flakes. Didn't need cornstarch, PB thickened nicely. The red pepper really adds a nice taste to this dish.

Beef, Burgundy Style

This was ok, but nothing to fall over about. Make sure to use good quality wine. I thought the tomato paste was a bit overpowering. I'll keep trying other beef burgundy recipes as well.

Blue Cheese Walnut Toasts

Yum! Fabulous and SO simple. I left out the butter mixed in with the cheese in a feeble attempt to cut calories. I just love bleu cheese and walnuts together...served this with the pear and roquefort salad and beef burgundy found here as well. Thanks for sharing...my mouth is watering just thinking about them!

Baked Whole Cauliflower

I think even with this dish, it will not turn a cauliflower hater into a lover...either you like the stuff or you don't! It was ok, but cover any vegetable in breadcrumbs and cheese, and it will have the same effect. I think rather than trying to get the breading to stick, sprinkling it over cut up cauli in a baking dish may have the same taste and be more efficient.

Spanakopita II

Pretty good. Never had the "authentic" kind to compare it to, but it was a nice finger food. The spinach and feta go nicely....all I changed was adding a touch of nutmeg. Working with phyllo dough is not my idea of a good time though! Thanks for sharing, was a nice change of pace.
