Layered Chicken and Black Bean Enchilada Casserole

This was good, but next time I will tweak it a bit. Maybe some chili powder and more seasonings...it was just a touch bland. Good idea though.

Chickpea Salad with Red Onion and Tomato

Stuffed Pork Chops with Gorgonzola and Apple

This one is a keeper. I added a splash of balsamic and some walnuts to the stuffing. Use a meat thermometer to ensure chops don't overcook. Have all ingredients at room temp to prevent curdling of the sauce and watch it closely. I had to sub Roquefort for the gorgonzola and dry white wine for the sherry, but it was still wonderful, thanks for sharing!

Cheesecake Cupcakes

Good idea, but needs some tweaks or it is too eggy. I used the standard "1 egg per 1 brick of cream cheese rule" for these and they turned out fine. I added the sourcream to the mixture and skipped the whole topping process. I also added 2 TB flour to help set them. I halved the batch and added cocoa powder to half the mix for chocoloate cupcakes. I let my daughter top them with sprinkles, strawberries, chocolate sauce or caramel sauce.

Pesto Cream Sauce

Awesome! I also added the flour to the onion/garlic and then added the milk to cook the flour well. I added a splash of white wine, half and half and milk. At the end, I pretty much threw everything but the kitchen sink in...mushrooms, shrimp, ham, and a sprinkling of green onions.

Almond Rhubarb Coffee Cake

Very good. I used applesauce rather than oil and it was super-moist. I stacked the two cakes and drizzled with a simple powedered sugar glaze. made for a nice presentation. I love rhubarb and almonds together!

Pork Chops with Blue Cheese Gravy

Pretty good. I hate to call such a nice sauce gravy though. It was a good sauce that could be very versatile. I suggest using a thin chop. I used thick chops and they took forever to cook.

Colleen's Slow Cooker Jambalaya

Yum! I added a bag of Lipton Sides red beans and rice during the last hour to soak up any liquid. I still don't know the diff between gumbo and jambalaya, but I know I like this!

Pesto Chicken Florentine

Eh...not too impressed. Tasted like a frozen diet entree. The salt from the store bought pesto and the dry alfredo mix was enough to keep me floating around all night and into the next day. I like the idea, but will do it with homemade alfredo and pesto. Thanks for the idea though.

Outrageous Chocolate Chip Cookies

Pretty darn good and makes for a very presentable cookie -- they look very "bakery" like. I was out of oats so I used Kashi whole grain instant oat cereal and they turned out really well! I love the combo of flavors. I upped the salt to 1/2tsp since I had unsalted butter.

Boudreaux's Zydeco Stomp Gumbo

Awesome! I have never made gumbo, but this was easy and good. I kept it on medium in the crockpot for a few hours and the flavor really intensified in just those few hours. I may cut back on the cajun seasoning next time -- a bit too salty or maybe try a low sodium sausage.

Easy Slow Cooker French Dip

Very easy, very good and makes good leftovers. Served on toasted rolls with provolone. The only change I will make is the type of meat I use. I don't think the rump roast was the right call -- too stewy. Maybe something less grainy next time.
