Oatmeal Chocolate Coconut Chewy

awesome. Used 1c. chocolate chips and 1c. butterscotch chips. Reminds me of those seven layer Eagle bars made with condensed milk!!

Green Smoothie

this is great, I used my immersion blender to process it all. I used coconut milk and chia seeds since I had some on hand. Very tasty and I feel good starting my day with this.

Avocado, Tomato and Mango Salsa

This is best if it is going to be consumed the day of making it because the avocado can get pretty icky after a day or two. Great flavors and one of my staples salsa recipes now. I leave the avocado out if I'm making batches to save and serve later.

Dried Cherries, Pecans and Rosemary Brie en Croute

This was great. I didn't have dried cherries and was making this for Thanksgiving, so I spread some cranberry sauce over the Brie, it was very nice.

Rhubarb Strawberry Crunch

I use my food processor for the butter and flour and then add the br. sugar and oats to that and stir by hand. Makes for a nice consistency on top. This is one of our favorite summer treats.

Heavenly Angel Food Cake

This was so much better than the boxed mix. It didn't have that weird aftertaste like the boxed kind. This was also much more dense, but that could be because I didn't whip the whites long enough. Definitely a keeper! Served with fresh rhubarb compote.

Easy and half the price of local carry out joints...big hit for a party. Make sure to have your butcher trim off most, but not all of the extra fat to make for easier slicing.

Lana's Sweet and Sour Meatballs

This was good. The recipe as written works just fine. Personally, the sweet and sour sauce with meatballs was just a little weird for me. It tasted great, just not a combination I'm used to. Great way to used up some ground beef though and the sauce was excellent.
